Before summer comes to an end, do yourself a favor and make this salad. It features one of summer’s most iconic produce items: the mighty watermelon. It is juicy, refreshing, sweet, and crispy. Just make sure that you use the watermelon before it gets too ripe and soft. You want crisp cubes for this salad! Plus, an overripe watermelon can have an unpleasant flavor, which will not go well with the blueberries, mint, and vinaigrette.
This is actually a great salad to make if you have leftover watermelon that you do not want to enjoy on its own. Perhaps you had a party and cut up an entire watermelon, but half of it went uneaten. That’s perfect because this recipe calls for eight cups of watermelon. You can choose to use less if you want to make a smaller salad. Add in the blueberries and freshly chopped mint and you are in business. In fact, you could enjoy that trio without dressing and be perfectly content, but the apple cider vinaigrette adds a savory element that makes this feel more like lunch and less like a breakfast side.

Ingredients
For the Dressing
- 2 oz olive oil
- 1 oz apple cider vinegar
- 1/2 tsp. sea salt
- 1/2 tsp. ground black pepper
For the Salad
- 8 c watermelon, diced
- 2 c blueberries
- 1/4 c mint, roughly chopped or torn
Instructions
For the Dressing
- Add all of the ingredients together and whisk to combine. Taste and adjust seasonings as needed.
- Set the dressing aside while you prepare the salad.
For the Salad
- Add all of the ingredients to a large bowl and toss gently to combine. You do not want to bruise the mint leaves.
- Pour the dressing on salad and toss to coat the ingredients. Serve and enjoy.
- Keep in mind that the salad can get a little watered down the longer it sits because of the amount of water in watermelon.
