- 1 medium grapefruit, peeled and thinly sliced
- 1 Meyer lemon, peeled and thinly sliced
- 1 fennel bulb, thinly sliced
For the Dressing
- 3 tbsp. extra virgin olive oil
- 2 tbsp. apple cider vinegar
- Sea salt and pepper, to taste
- 2 tbsp. parsley, chopped
Instructions
For the Salad
- Once you have all of your ingredients prepped and ready to go, either layer everything meticulously on a large platter, or add everything to a large salad bowl.
For the Dressing
- Make sure that you discard all of the citrus seeds and peels. Set aside while you prepare the dressing.
- In a small bowl, whisk the ingredients together, taste the dressing, and adjust seasonings as needed.
