🛒 For the Raw ‘Tuna’:
- 2 cups raw sunflower seeds (soaked in water for 1 hour then drained)
- 1 tbsp dulse
- 1 garlic clove
- 1 tsp raw apple cider vinegar
- 1 tsp fresh lemon juice
- 1 tsp dried thyme
- ½ tsp sea salt
🛒 For the Avocado Halves:
- 3 avocados, halved and pitted
- ½ cup tomatoes, diced
- ½ cup cucumber, diced
- Fresh chopped parsley (optional garnish)
📋 Instructions:
- Add sunflower seeds and all remaining tuna ingredients to a high-speed blender or food processor and blend until you get a smooth paste. Add a little extra virgin olive oil if needed to help it blend
- Take 1 cup of the tuna and mix it in a bowl with the diced tomatoes and cucumbers
- Place avocado halves on a plate and spoon 1-2 tbsp of the tuna mixture into the center of each half
