5 Carrot Recipes You Need To Try This Week

Carrots are one of our favorite root vegetables. They have a plethora of nutrients, specifically beta-carotene, and the best way to get these nutrients is by consuming them raw. However, you can still reap some health benefits when you cook them; just don’t burn them to a crisp.

Did you know that carrots were not always orange? Carrots used to have purple or yellow roots, and those have been grown since the 10th century. Western carrots, which are typically orange or slightly red, are more recent and have only been grown since the 16th/17th century.

If you have ever tried to grow your own carrots from carrot tops, you know that the center of the root has a woody texture and flavor. Those carrots are not very tasty and it can be hard to rid them of that specific flavor. You’ll notice this flavor more in purple or yellow carrots because they haven’t been mass-produced and cultivated as much.
