A Zesty North African Herb Sauce

This is herb-filled sauce, used in Algerian, Moroccan, and Tunisian cooking, is traditionally used as a marinade for fish or meats. However, it’s great for vegans, as a tasty sauce in which to bake tempeh, or to top tofu or vegetables.

Zesty North African Herb Sauce

Yield: about 3 cups

Ingredients

  • 3 Tbsp. extra-virgin olive oil
  • ½ cup finely chopped red onion
  • 1 tsp. coarse sea salt
  • 3 large cloves garlic, minced
  • 1 ½ tsp. cumin seeds, toasted and ground
  • ½ tsp. paprika
  • ¼ tsp. freshly ground black pepper
  • 1/8 tsp. cayenne pepper
  • 3 Tbsp. freshly squeezed lemon juice
  • 1 Tbsp. freshly squeezed orange juice
  • 2 Tbsp. water
  • ¼ tsp. minced seeded habanero chile
  • Pinch of saffron threads, crumbled
  • 1 ½ cups packed minced cilantro
  • ½ cup packed minced flat-leaf parsley

Directions

Warm the oil in a medium saute pan over medium-low heat. Add the onion and salt and saute until the onion is soft, 5 to 7 minutes. Add the garlic, cumin, paprika, black pepper and cayenne and saute until fragrant, for 2 to 3 minutes. Set aside to cool slightly, about 5 minutes.

Add the lemon juice, orange juice, water, habanero, and saffron and mix until well combined. Stir in the cilantro and parsley. Taste and season with more salt if desired. Use immediately or store in a tightly sealed jar in the refrigerator for up to 1 week.

    You can do it as often as you FEEL the need to drink or take it.

    Q: I am writing you to see if you have any information and remedies for hemorrhoids. I am a Black African male in my 40's.     Q: I have been drinking nettles tea as well as parsley juice and a tea made of marshmallow, gravel and hydrangea roots to control my potassium levels. I have noticed that my potassium numbers are less controllable now that I do dialysis once or twice a week.     Q: I am interested in all the lessons you have tabled in the article section of Dherbs. On reading one article, I learned that pepper is a mucus irritant. I am concern because I have about read on some other blog about a doctor that cure cancer using pepper and garlic (credits to KELLY EIDEM). So, I have been eating raw hot pepper and garlic.     Eating hot peppers has its benefits but excess consumption may eventually cause harm. It boils down to how often and how much of them you are eating. Organic doesn't make a thing necessarily good to eat. Organic peanut butter is better than regular or inorganic peanut butter but peanut butter is peanut butter and thus hard on the digestive process.

    Q: Can I lightly sauté in Olive oil or steam my raw vegetables occasionally on the Full Body Cleanse? This is my second day on the cleanse and I am having a hard time eating crunchy vegetables.

    Hi, and thanks for the question.

    It is best to avoid oil for the cleanse and future dieting. Oil slows down digestion, reduces blood flow up to 30 percent for 3 hours after digestion, and is essentially a ton of calories with little to no nutrient value. When you sauté vegetables in olive or other oil you are turning a low calories highly nutritious food into a high calorie and low nutrient dense food.

    Steaming is an ok option if done lightly. When you steam vegetables you do reduce nutrient value and destroy some enzymes. If you do you will lessen the impact of the cleanse to a degree but I would rather you eat the vegetable than not at all. The benefit of eating the vegetable lightly steamed is better than avoiding the vegetable.

    Q: I am interested in starting the Full Body Detox program. At this time, I would like to know which program is best for me. At current, I have started removing things from my diet as of 2 weeks ago (pork, chicken, red meat, I'm trying with the fish but it's hard!) I am not eating cheese but I still eat yogurt and every now and then I will eat a boiled egg (egg whites).     Q: I was having a discussion with my sons father about whether or, not black americans are descedants of africa. He says he is black, and is not a descendant from africa. That "we" can be from any where, not just africa. He doesn't accept the term african american. My sister was present, and she agreed with him. His statement made me so angry! Do think blacks are descedents of africa? Where else are we from, Europe? I thought this was just ignorant of thim to say.
