Carrots rank right up there with spinach among earth’s topmost health foods. These cold months are a wonderful time to enjoy them steamed, roasted, baked and grilled. My favorite way is to steam them with green peas—they provide a beautiful color contrast and complement each other perfectly.

I dug up some carrot facts that will bring you closer to this root vegetable’s amazing health benefits, and help you eat them more wisely:

  • The bright orange color of carrots comes from the antioxidant beta carotene, which is converted into Vitamin A during digestion. Carrots in other colors such as red and purple have beneficial antioxidants, too.
  • Carrots are a nutrition-rich food, containing fiber, Vitamin C, Vitamin K and essential minerals.
  • Eating cooked carrots is a healthier option than munching them raw. That’s because cooking breaks down the tough cellular walls of the vegetable, making the beneficial beta-carotene in them more easily available to the body. Just make sure you don’t overcook them to mush.
  • Carrots could play a role in making babies! A Harvard study finds that carrots can boost male fertility, helping sperm swim faster toward an egg.
  • Carrots and beets are the sweetest vegetables on earth. Most of the sugar in carrots is concentrated in their core. So if you want to avoid all that sugar, choose medium sized carrots.
  • You can use carrots instead of high-calorie butter and cream in your bakes—they will add a lovely color and tender sweetness, and the fiber in them will lend  a thick texture. They make great soups, too.

    Q: My question is what could be causing my puffy eyes? I've had them for probably 6 or 8 months now (maybe more). They sometimes will have a little darkness added to them.     Q: Thank you for always answering my questions. I have about two more. Okay, I'm currently living overseas where I'm limited on raw fresh foods (vegetables and fruits). I want to do the detox but I'm concerned that I won't have everything as far as raw food to be successful. I have access to basics (apples, oranges, bananas, tomatoes, avocados, melons, lettuce, cabbage, bean spouts, carrots, celery, peppers, green beans, peas, bagged nuts,) but nothing exotic by any means. Then I was told to safely eat some of the food in the local economy that we should wash it with a 5% bleach solution (is that safe...and if on the detox I'm thinking that would be a no go). Two questions?Given the mentioned availability of raw foods could I be able to successfully complete the detox (I don't have an issue with eating the same things over and over again) and two what can I do to clean local produce so that its safe for consumption?     In order to clean local produce, rinse thoroughly with apple cider vinegar to "disinfect" it. If apple cider vinegar is unavailable, just use water.

    Q: I am currently living in Atlanta GA, moved here from New York. I've never suffered from pollen, or being allergic to raw fruits peach, apples or plums. I can't eat raw carrots and other types of nuts until I moved to GA, and started to suffer from Allergies. Now my question is, is there something from your site or some type of herbal combination that I can take to 1. Stop my allergic reaction during March/April pollen season and two help me to eat the natural fresh fruits I used to enjoy before without having to throw it all up, or being unable to digest it.

    Q: I am on my 3rd day of the fully body cleansing. I am definitely doing this to lose weight. I am a 52 year old, black, Christian, wife, mother to 21 and 14 year old girls, legal secretary who is 450 lbs. I am to the point now where if I don't do this I'm going to be housebound. I can barely move some days that is why I started this because I feel so unhealthy. I have a question about the nuts. I got all gun-ho and ordered $135.00 worth of organic nuts from nuts.com. I got raisins, pumpkin seeds, sunflower seeds, almonds, walnuts, pecans, pistachios and cashews and mixed them all up together (well I purchased 2 lbs of each but I only mixed up 1 lb of each together). Anyway, I was reading about how much calories are in nuts. Should I not pay attention to that because I was consuming a lot of calories in the first place or do I have to watch how many nuts I eat? I have put some nuts in a sandwich bags and basically filled it up and that is supposed to be my nuts ration for the day. I am also eating fruits and vegetables. So far the fruit have been grapes, grapefruit, red apples, pears, green apples and bananas. The vegetables have all been in a salad: tomatoes, celery spinach leaves, carrots, mixed in balsamic vinaigrette. I only ate the salad Monday night all the other times I have just eaten the fruit and nuts. I am also consuming approximately 75-100 oz of water. Sorry I’m long winded I just wanted you to get the entire picture.

    Nuts are best kept to a minimum if you use them at all. Nuts are extremely high in fat and have the opposite omega 3- omega 6 ratio that is optimal for health. Seeds are best as far as ratios are concerned. Also nuts are truly easy to over eat and cause your nutrient ratios to be off.

     

    A healthy vegan diet is a high raw fruitarian diet. 

    Example:

    Breakfast: green smoothie. (500-1000 calories of fruits blended with a handful of greens and water)

    Bridge: Dates and strawberries (500 calories) 

    Lunch: Salad with low sugar fruits (cucumber, tomato, squash, bell peppers) topped with fruit, beans, psuedo grains, 

    Bridge: 2-3 apples

    Dinner: Raw wraps (collard greens) with low sugar fruit and tahini

    Snack: Sorbet

    Q: I am a medium brown colored black male, age 41. I am conscious about what I eat. However, I am experience spotty scalp discolorations on my head scalp and neck area. There are like an almost white color. Dermatologists can't help it. It just comes and goes. I can not figure out what it is?     Q: First off, let me say, I am soooo happy to have caught the DHERBS advertising while listening to WVON radio in Chicago, IL. This is a very professional, informed and wholistic website. Kudos to the DHERBS team!     Q: I am an African American, 70 years old, and in good health and physical condition. I jog/walk 1 1/2 miles 5 days a week, do pushups and sit ups daily. But, I have low bone density, on the following medication: once a month Itake 1 capsule of Ergocalciferl 50,000 mg; once a week I take 1 tablet of Alendronate 70mg (Fosamax) a week (same day), and daily one tablet of calcium 500 with Vitamin D, and a multi-vitamin tablet.     Q: I had my annual physical in November 2008, where it was determined that my Vitamin D levels were low (17). I did the Full Body Detox in January, which was great.
