Banana Cinnamon Crepes with Berry Ice Cream and Mango

Alright. So these are so crazy yummy. I inhaled all of them within minutes and it’s a true miracle I was able to hold off until I got some semi-decent photographs. The crepes themselves taste like banana bread and if you roll them up they’d be a terrific, healthy, and addicting snack wherever you go. If you can control yourself and not eat them all before you leave your dwelling, that is. I’m giving you the benefit of the doubt here.

BANANA CINNAMON CREPES WITH BERRY ICE CREAM AND MANGO [VEGAN, RAW, GLUTEN-FREE]

 
INGREDIENTS

Crepes:

  • 4 peeled bananas
  • 1 teaspoon cinnamon powder
  • 1/4 cup coconut milk

Ice cream:

  • 3 peeled frozen bananas
  • 1/4 cup berries

Fruit:

  • 1 cup berries
  • 2 mangoes

Garnish:

  • Fresh mint leaves
  • Cinnamon

PREPARATION

To make the crepes:

  1. Blend the bananas with the cinnamon and coconut mylk until smooth. Pour into thin circles on parchment paper lined dehydrator trays (I used a 1/4 cup of batter per crepe), or baking pans, and “bake” in your dehydrator at 115 degrees for 3 1/2 hours or in your oven at its lowest temperature. The end result you want is crepes that don’t stick on your finger and when you press on them. I tested mine throughout the “baking” process; for awhile the batter was still liquidy and my finger would just move it around, then it started getting more solid but when I poked it a little dough would stick to my finger and break off from the crepes, then finally I was able to press on the crepes and my finger came away clean. At this point, take them away from the heat and let them cool for 20-30 minutes. Gently pull them away from the parchment paper and there you go!

To make the ice cream:

  1. Blend the bananas and berries until smooth. Spread this inside your crepes, along with the chopped fresh mango and berries, and decorate with cinnamon and mint leaves.

    Q: Sorry for my abbreviated style, it is because I type with one finger. We are happily married since1971; we have 3 children 1973, 1977 1984. From the first day of marriage, time-to time I experienced that had difficulty to have good erection. (Not always) in the past approx 2 years it is getting worse and often failed.     Q: I'm a raw vegan, and still suffering from acne. I stay away from all sweeteners, except fresh whole fruits. I started to have lots of greens juices these days, and my skin has improved a little bit. What about spices such a cayenne pepper, is it bad for your skin? What about goji berries?     Q: I am on my 3rd day of the fully body cleansing. I am definitely doing this to lose weight. I am a 52 year old, black, Christian, wife, mother to 21 and 14 year old girls, legal secretary who is 450 lbs. I am to the point now where if I don't do this I'm going to be housebound. I can barely move some days that is why I started this because I feel so unhealthy. I have a question about the nuts. I got all gun-ho and ordered $135.00 worth of organic nuts from nuts.com. I got raisins, pumpkin seeds, sunflower seeds, almonds, walnuts, pecans, pistachios and cashews and mixed them all up together (well I purchased 2 lbs of each but I only mixed up 1 lb of each together). Anyway, I was reading about how much calories are in nuts. Should I not pay attention to that because I was consuming a lot of calories in the first place or do I have to watch how many nuts I eat? I have put some nuts in a sandwich bags and basically filled it up and that is supposed to be my nuts ration for the day. I am also eating fruits and vegetables. So far the fruit have been grapes, grapefruit, red apples, pears, green apples and bananas. The vegetables have all been in a salad: tomatoes, celery spinach leaves, carrots, mixed in balsamic vinaigrette. I only ate the salad Monday night all the other times I have just eaten the fruit and nuts. I am also consuming approximately 75-100 oz of water. Sorry I’m long winded I just wanted you to get the entire picture.

    Nuts are best kept to a minimum if you use them at all. Nuts are extremely high in fat and have the opposite omega 3- omega 6 ratio that is optimal for health. Seeds are best as far as ratios are concerned. Also nuts are truly easy to over eat and cause your nutrient ratios to be off.

     

    A healthy vegan diet is a high raw fruitarian diet. 

    Example:

    Breakfast: green smoothie. (500-1000 calories of fruits blended with a handful of greens and water)

    Bridge: Dates and strawberries (500 calories) 

    Lunch: Salad with low sugar fruits (cucumber, tomato, squash, bell peppers) topped with fruit, beans, psuedo grains, 

    Bridge: 2-3 apples

    Dinner: Raw wraps (collard greens) with low sugar fruit and tahini

    Snack: Sorbet

    Q: I recently started a natural breast enhancement routine. I am using fenugreek seed, mint tea, and licorice. After I purchased the licorice, I noticed you can only take it for 4 - 6 weeks. I think maybe I should be taking something for 3 months. Should I get something different such as red clover, and saw palmetto to take with fenugreek, or stick with the licorice for the 6 weeks to see what happens any advice is greatly appreciated!

    Q: I just recently found out that the face cream I have been using for 1 year has a horrible carcinogen in it called hydroquinone. I have been putting it on my face twice a day for over a year. Of course I had no idea this ingredient was a carcinogen, apparently a very serious one, until recently. I am not so worried for myself but concerned for my children who through cuddling and kissing were exposed to this substance as much as I was. What could I possibly do to get this horrible chemical out of their system and reverse it's damage.     Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence.     Q: My son eats, and 30 minutes or sooner he has to go to the bathroom. He is thin, and doesn't hold food. If he eats he goes. What can he take to try to hold his food a little longer so that we can gain a few pounds. Is this behavior healthy? The doctors say he is fine, but going to the bathroom everytime you eat something, is a bit much.

    Q: I went on a business trip to a not so clean hotel and came back with these mites. I tried to treat them with a common cream (I cannot think of the name right now). It worked but I did not realize then that you were supposed to use a follow up application a week later. They are back, and now seem to be immune to it. I?ve read about neem and karanja oils, and I have tried them, but I am not sure I am doing it right. Any suggestions?
