Beet and Carrot Greens

When I was a kid, my mother would buy carrots with the long bunch of greens attached. She would chop them off and give them to our parakeets and finches who loved to eat them. Today we know that the tops of vegetables are not just for the birds. A few summers ago, I had an abundance of radishes and used the greens in several recipes. The green tops of many veggies are edible and yummy. Just like the vegetables they come from, the green tops have distinctive flavors and textures. There is a new movement in the food world of root to stem and root to stalk cooking. The leaves, greens, stems and stalks we tend to throw away are completely edible and instead of wasting them, we should all be using them to cook amazing and unique dishes. So the next time you buy carrots and beets, don’t throw the greens away. Here are some ways to use them instead of tossing them.

1. Storage

When you bring your beets and carrots home from the market, don’t store them with their greens still attached. The tops take moisture away from the vegetables. Remove the tops from the vegetables and store them separately. The tops don’t last very long so plan to use them right away. Until you are ready to cook them, wrap a damp paper towel around them and store in a plastic storage bag in the fridge for no more than a day.

2. Blanch Away the Bitterness

Although you can eat the greens raw, some people might find them a bit bitter. Blanching is a useful technique to help remove any bitter taste. To blanch the greens, bring a large pot of water to a rapid boil and drop the greens in. Stir them around a bit. In just a few minutes, the greens will start to soften and become a beautiful, bright color. You don’t want to cook them too long or they will lose that color and get mushy. Then transfer the greens to an ice bath to shock them. This will stop the cooking process and help them keep that beautiful, bright color. If you don’t want to set up an ice bath, at least transfer the greens to a colander and run cold water over them for a minute. 3. Make Pesto

While pesto is traditionally made with basil, you can use any kind of greens to make it. I love making pesto out of kale, spinach, radish greens or any greens I happen to have on hand. MyBeet Greens Pesto is simple: in a food processor, combine 4 cups of beet greens (remove the stems), 4 cracked garlic cloves, ½ cup walnuts, 3 Tbs. vegan grated parmesan, ½ tsp. kosher salt and ¼ tsp. black pepper. Process the ingredients while streaming in up to ½ cup extra-virgin olive oil until you have the consistency you want. Store the pesto in an airtight container in the fridge. Then use your pesto as a sauce for your zucchini pasta or to make incredible veggie pizza.

4. Make Vegetable Stock and Soups

Soups and stock are great ways to use up any veggies and their parts. Since they will just boil away in the liquid, you don’t have to worry about overcooking them and any bitterness will be taken care of. Just add the carrots and/or beet greens to the pot with whatever veggies, herbs and spices you are using to make your stock. The next time you make a Root Vegetable Soup, add the tops of your root veggies to it as well.

5. Make Salads

Whenever I make Borscht or beet soup, I make sure to buy beets with lots of greens attached. Then I make a salad with the greens to have with my soup. Carrot and/or beet greens can be added to any salad. If you find them bitter, you might want to blanch them first (see above) but I like them raw. Add the greens to salads that already have carrots and/or beets to show how you can eat all parts of a vegetable. 6. Saute the Greens

My favorite way to cook greens is to saute them in a pan with olive oil, garlic, shallots and a pinch of red pepper flakes. I don’t cook them long, just long enough to wilt and get bright green. I love the greens sauteed with just the aromatics but a bit of tamari, vegan Worcestershire sauce or vinegar is also delicious. Sautéing is easy: heat your pan over medium-high heat, add oil and let the oil heat up until it starts to shimmer. Add any aromatics such as onion, garlic, ginger or chile pepper, and saute them until they are softened. Add the greens and season them with your favorite herbs and spices. Stir often in the pan and cook until they are wilt and are crisp-tender. 7. Make Smoothies

Smoothies are a great way to use beet and carrot greens. It shouldn’t seem unusual since we already add plenty of greens like kale, spinach and chard to our smoothies. Try adding just a little to start with and see how you like it before adding a lot more. 8. Swap Them In

Sometimes when I am out of parsley or cilantro, I garnish my dishes with whatever greens I have – kale, celery leaves, radish tops, etc. Parsley and cilantro get added to a lot of dishes, as garnish and in the actual recipe. Try swapping out the parsley and cilantro and swap in the carrot or beet greens. The next time you visit the farmers’ market and they ask if you want the tops of your beets and carrots cut off, politely decline. The farmers will probably smile because they knew all along that carrot and beet tops are edible and delicious.

    Q: My question is what could be causing my puffy eyes? I've had them for probably 6 or 8 months now (maybe more). They sometimes will have a little darkness added to them. Sometimes I wake up and whatever side I've been laying on, that eye will be even more swollen than the other side, but they are usually the puffiest when I first wake up. Sometimes it looks like I've been bopped in the eye in my sleep. I've cut out a lot of the processed foods and stay away from sugars for the most part.     Q: I am doing the the Full Body Detox, the Anti Viral Cleanse, and then the 10 Day Electric Greens Cell Food Cleanse. I am trying to fully heal form so called HIV. I started seeing brown spots on my palm, and bottom of my feet. I am trying not to freak out. I am drinking distilled, and alkaline water. Also eating salads, smoothies(not diary), and fresh fruits.     Q: I did the FBD, the Antiviral Cleanse, and Electric Greens Cleanse. I tested negative for HSVII, (thank GOD). But, I have still been experiencing a lot of itching, and redness in the genital area (and they get worse around the same time periods that my genital herpes outbreaks used to flare up, though this just might be a coincidence). There aren't any big lesions, but sometimes there are small patches of red raw skin, (not cuts). I know that the body can eliminate toxins via the skin. Knowing this I am assuming that if I take in toxins, it is still leaving via the skin (correct me if I'm wrong).

    Q: I ordered the 10-Day Electric Greens Cell Food Cleanse, and I also ordered theMoon Cycle Formula. My question is should I wait to start the Moon Cycle Formula after doing the detox? I ordered the Moon Cycle Formula, because on July 31 my menstrual cycle ended, and it came back on August 15, back on September 5, and then again on September 20.     Q: I had surgery to drain a cyst on my right ovary, while in surgery the doctor hit my bowels, and they had to call in a surgeon to repair my bowels. I am on this low fiber diet now, and not able to eat raw foods. This means nothing in the green family like lettuce, or greens since they are hard to digest.     Q: I'm a raw vegan, and still suffering from acne. I stay away from all sweeteners, except fresh whole fruits. I started to have lots of greens juices these days, and my skin has improved a little bit. What about spices such a cayenne pepper, is it bad for your skin? What about goji berries?     Q: I am on my 3rd day of the fully body cleansing. I am definitely doing this to lose weight. I am a 52 year old, black, Christian, wife, mother to 21 and 14 year old girls, legal secretary who is 450 lbs. I am to the point now where if I don't do this I'm going to be housebound. I can barely move some days that is why I started this because I feel so unhealthy. I have a question about the nuts. I got all gun-ho and ordered $135.00 worth of organic nuts from nuts.com. I got raisins, pumpkin seeds, sunflower seeds, almonds, walnuts, pecans, pistachios and cashews and mixed them all up together (well I purchased 2 lbs of each but I only mixed up 1 lb of each together). Anyway, I was reading about how much calories are in nuts. Should I not pay attention to that because I was consuming a lot of calories in the first place or do I have to watch how many nuts I eat? I have put some nuts in a sandwich bags and basically filled it up and that is supposed to be my nuts ration for the day. I am also eating fruits and vegetables. So far the fruit have been grapes, grapefruit, red apples, pears, green apples and bananas. The vegetables have all been in a salad: tomatoes, celery spinach leaves, carrots, mixed in balsamic vinaigrette. I only ate the salad Monday night all the other times I have just eaten the fruit and nuts. I am also consuming approximately 75-100 oz of water. Sorry I’m long winded I just wanted you to get the entire picture.

    Nuts are best kept to a minimum if you use them at all. Nuts are extremely high in fat and have the opposite omega 3- omega 6 ratio that is optimal for health. Seeds are best as far as ratios are concerned. Also nuts are truly easy to over eat and cause your nutrient ratios to be off.

     

    A healthy vegan diet is a high raw fruitarian diet. 

    Example:

    Breakfast: green smoothie. (500-1000 calories of fruits blended with a handful of greens and water)

    Bridge: Dates and strawberries (500 calories) 

    Lunch: Salad with low sugar fruits (cucumber, tomato, squash, bell peppers) topped with fruit, beans, psuedo grains, 

    Bridge: 2-3 apples

    Dinner: Raw wraps (collard greens) with low sugar fruit and tahini

    Snack: Sorbet

    Q: My question is about hair loss. I am a 45 year old African American female. I started losing my hair about 15 years ago. I specifically remember unusual symptoms before it started to fall out. First, my entire scalp had a burning sensation, and it was very tender to the touch. It was very difficult to brush, comb and wash. Then after that, I am not sure how much longer after, but a dry patch of skin developed toward the back of my head (approximately 1 inch in diameter). I was able to peel it off and pull it through the strains of hair (very weird). That happened a couple of times and not too long after that, my hair started to fall out in large amounts for a fairly long period of time. At the moment I would say that I am mostly bald with hair mostly around the edges. Also I would like to mention that hair started to grow on my chest BUT I started to lose hair in my vaginal area. Sorry if some of this sounds sketchy but it's been 15 years!! I will try to give you a little bit of my history. I am 5'8" and 135lbs. I would say that for the most part, I have been an athlete all my life. My menses were very irregular sometimes and/or absent for long periods of time. When my menses were present, I had very bad cramps and clotting. My menses are now very regular and I hardly have any cramps, my flow is light and very little clotting. I would have to say that it is now a pleasure to have my "period". This also might be a result from switching my diet to a vegetarian diet. I have been a vegetarian for about 16 years. I would say 20% is dairy, but after reading your articles, I am trying my best to become vegan, hopefully even a raw foodist. I also eat tofu. I have never had hair problems growing up. I did get relaxers, but only twice a year. I have had my appendix removed when I was in elementary school. My bowel movements are usually once a day. (I know it needs to be 3.) So anyway, I have been to a couple of medical doctors to no avail, so now I am coming to you. I just received the following products from your company today (10-06-08).     Q: I was wondering if it is okay to mix Mrs. Dash season blend with Olive Oil as a dressing for my salad? It tastes real bad with just Olive Oil alone, and I don't like the bitterness taste of lemon juice, and apple vinegar cider.     Q: Have you heard that drinking beet juice with a table or teaspoon of black strap molasses gets rid of fibroids? Beet juice purifies the blood. But, this has to be done everyday.

    Q: My father has Parkinson disease the early stages and he cannot stand that well and he have prostate problems.     Q: I started the full body detox today, and found that I DO NOT like the salad dressing I made with the olive oil, apple cider vinegar and lemon juice. I found I could not tolerate it on my salad. What can I do instead? Another question is... I noticed lentils on the food combining chart. Those have to be cooked. Are those actually allowed to be consumed warm? I love the raw fruits and vegetables. I don?t have a problem, cause I love salads. I just need help on what I can have on it.

    Q: I am on day 4 of the FULL BODY DETOX and was wondering what else can or should I eat besides toss salad and fruits and veggies.
