Buffalo Cauliflower With Sweet Potato Noodles

Cauliflower keeps being predicted as “the next big thing” in the food world (actually, SHAPE magazine nicknamed a nutrition trend article as ‘cauliflower is the new kale’), so I figured I’d put this versatile veggie to creative use. The buffalo cream sauce is just… well, make it and you’ll be able to finish that sentence. It’s otherworldly! The cauliflower softens in the oven and soaks up the spicy flavors in the sauce.

VEGAN BUFFALO CAULIFLOWER WITH SWEET POTATO NOODLES [VEGAN, GLUTEN-FREE]

INGREDIENTS

  • 1 medium head of cauliflower, chopped into florets (about 8 cups)
  • salt and pepper, to taste
  • olive oil cooking spray
  • 3 tablespoons coconut oil
  • ¼ cup raw cashews, soaked in water for at least 2 hours
  • vegetable broth, if needed
  • 2 large sweet potatoes, peeled, Blade B, noodles trimmed
  • 1 tablespoon chopped parsley, to garnish

For the buffalo pasta sauce: 

  • 3-4 tablespoons hot sauce (I use Tessemae’s)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon apple cider vinegar
  • salt, to taste

PREPARATION

  1. Preheat the oven to 400 degrees. Arrange the cauliflower on a baking sheet, season with salt, pepper and coat lightly with cooking spray. Roast for 20-25 minutes or until beginning to brown.
  2. On another baking sheet, lay out the sweet potatoes and coat lightly with cooking spray and season with salt and pepper. Roast for 17-20 minutes or until cooked through, but still al dente (taste test.)
  3. While the cauliflower and sweet potato roasts, puree the cashews in a high-speed blender or food processor until creamy. Set aside.
  4. In a medium pot over medium heat, melt the coconut oil. Add the coconut oil to the cashew cream along with the other ingredients for the buffalo sauce and puree again until creamy. If needed, add in vegetable broth until reached a sauce-like consistency (not runny, but not too thick.) Cover and set aside, to keep warm.
  5. In a large mixing bowl, toss together the cauliflower florets with half of the buffalo sauce mixture, keeping the remaining sauce in the pot. Spread the cauliflower back out on the baking sheet and cook for 5 more minutes or until sauce begins to bubble.
  6. Plate the sweet potato noodles and top with cauliflower florets. Stir the buffalo sauce and then drizzle over plates. Serve immediately, garnished with parsley.

    Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it.     Q: I'm doing the Full Body Cleanse and I have a few questions about it: I get tired of drinking just the distilled water and I'd like to drink the herbal teas, but I don't like it by itself.     Q: I see also that you recommend a complete diet with these programs. I am guessing its a vegan diet right? I wanted to ask something on that is coconut milk and coconut oils ok for that? I personally had a very hard time trying to eat that many vegetables and many ph balance vegans seem to think fruits aren?t good either.     The best way to get sodium is via vegetables (i.e. celery).

    Sea salt is great source of sodium, but its a secondary source as it has to be processed from ocean water. Absent the process, it would not be available.

    But it does provide minute amounts of trace elements.

    In re Epsom salt, I haven't been able to find the sodium one.

    I stopped using Epsom salt many years ago.

    You could bath in the good Epsom salt, but sea salt is far better and more natural.

    Did you read the "BEWARE OF DEODORANTS AND ANTIPERSPIRANTS" article? "Also beware of crystal stick deodorants. If the brand only contains mineral salts (i.e. 'Naturally Fresh' brand), you can take a chance. But just make sure "aluminum" is not an ingredient in any crystal deodorant you purchase. And because manufacturers are sneaky and tricky and only care about profits, make sure the crystal deodorant doesn't list "alum" as an ingredient. Alum is short for "aluminum", as in ALUM-inum (Alum + inum)."

    Q: I am interested in all the lessons you have tabled in the article section of Dherbs. On reading one article, I learned that pepper is a mucus irritant.     Eating hot peppers has its benefits but excess consumption may eventually cause harm. It boils down to how often and how much of them you are eating. Organic doesn't make a thing necessarily good to eat. Organic peanut butter is better than regular or inorganic peanut butter but peanut butter is peanut butter and thus hard on the digestive process.

    Q: I've been a vegan for 2 years now. I've done the FBD 3 times in these two years, but my urine is still yellow. The only time it is clear is immediately after I drink water (reverse osmosis water). If I miss a day of drinking water, my urine goes back to being dark yellow. Does this mean that my body is still very toxic? Also, is it normal to release urine 5 to 15 minutes after drinking liquids? I would think that water would need to stay in the body for awhile for proper hydration and cleansing.

    From what you wrote I would suggest you start drinking alkaline water (purchase an alkaline water machine, you can find various brands in our e-book "Alternative Diet and Lifestyle Manual"). If you are urinating within 10-15 minutes of drinking water you are not absorbing the water, and thus you require micro-clustered water which an alkaline (and ionizing) water machine does. I also highly recommend consumption of our Kidneys-Bladder formula (3 capsules per day).
