Butternut Squash Veggie Pizza

Ingredients
SAUCE
  • 3 cups (420 g) butternut squash, cubed*
  • 3 cloves garlic, whole, skin removed
  • 2 Tbsp (15 ml) olive oil, divided
  • Pinch sea salt + black pepper
  • 1 Tbsp (15 ml) maple syrup
PIZZA
  • 1 1/2 cups broccolini, chopped, large stems removed
  • 1/2 cup red onion, chopped
  • optional: 1/2 cup cooked chickpeas, rinsed and thoroughly dried
  • Pinch sea salt + black pepper
  • 1 tsp dried oregano
  • 6 ounces store-bought pizza dough (I Love Trader Joe’s Garlic & Herb or Whole Wheat | or this gluten free recipe)
  • 1 cup Butternut Squash Sauce (recipe above)
  • 1/2 cup vegan parmesan cheese or store-bought vegan mozzarella cheese*
FOR SERVING optional
  • Vegan parmesan cheese
  • Red pepper flakes
Instructions
  1. Preheat oven to 400 degrees F and position a rack in the middle of the oven.
  2. Add cubed butternut squash and peeled garlic cloves to a baking sheet and drizzle with 1 Tbsp olive oil and a pinch each salt and pepper. Toss to combine.
  3. Bake for 15-20 minutes, or until all squash is fork tender.
  4. Transfer squash and garlic to a blender or food processor with remaining 1 Tbsp olive oil and maple syrup. Purée until creamy and smooth, adding more olive oil or a touch of water if it’s too thick. The consistency should be creamy and spreadable (not pourable).
  5. Taste and adjust seasonings as needed. Set aside.
  6. Heat a large skillet over medium heat. Once hot, add 1 tsp oil, broccolini, onion, chickpeas (optional), salt and pepper, and oregano. Sauté for 2-3 minutes, stirring frequently. Set aside.
  7. Increase oven heat to 425 degrees F.
  8. Roll out pizza dough into an even circle and transfer to a parchment-lined round baking sheet (or similarly-shaped object).
  9. Top with ~ 1 cup sauce (you will have leftover sauce, which you can reserve for other pizzas), veggies, and chickpeas. Sprinkle on a bit more oregano and vegan parmesan cheese (or vegan mozzarella).
  10. Transfer pizza to the oven, laying the pizza and parchment paper directly on oven rack (slide the baking sheet off so it can bake directly on the rack for a crispier crust). Bake for 13-18 minutes, or until crust edges are golden brown.
  11. Slice and serve with remaining parmesan cheese, dried oregano, and red pepper flakes (optional). Leftovers keep well for 2-3 days, though best when fresh.
Notes
*The best way to cube butternut squash is to start with a large, very sharp knife, cutting off the top and bottom ends. Then cut in half where the small, cylinder shape and round, bulb-shape meet. Use knife to carefully remove skin. Then remove any seeds with spoon or ice cream scoop. Cut into small cubes and proceed with recipe as directed.
*For vegan mozzarella cheese, I love Daiya brand.

    You can eat cooked food as much as you like. However, try to incorporate as many nutrient-dense raw foods, such as fresh fruits and vegetables, raw nuts and seeds, into your diet to make sure you are receiving an adequate amount of nutrients.

    Q: After I had my baby over a year ago I've had a constant discharge. There is no foul order just thin white. I've been to the Doc four times she says I had Bacteria Vaginosis and treated it with gel. Its back! Can I do a cleanse to get rid of this or change my diet.     Eating hot peppers has its benefits but excess consumption may eventually cause harm. It boils down to how often and how much of them you are eating. Organic doesn't make a thing necessarily good to eat. Organic peanut butter is better than regular or inorganic peanut butter but peanut butter is peanut butter and thus hard on the digestive process.

    Q: I'm a raw vegan, and still suffering from acne. I stay away from all sweeteners, except fresh whole fruits.     Q: Is sea salt and warm water a good natural laxative? If so how often do you recommend the use of sea salt for elimination? I was reading The Master Cleanser by Stanley Burroughs and it gives this recommendation, along with drinking lemon water mixed with organic syrup and cayenne pepper. Is it safe to give myself an enema 2xs per day using a hot water bottle filled with fresh squeezed organic lemon and distilled water? Asking this because Bzod had me to listen to 88.3 today here in Cincinnati and the guy (Mike) was telling how he does this regularly and has great results.

    Yes, sea salt in water is a mild laxative!

    You can do it as often as you FEEL the need to drink or take it.

    Q: I am writing you to see if you have any information and remedies for hemorrhoids. I am a Black African male in my 40's. I have changed my diet for the last 3 yrs., no meat, fish, cheese, milk, no dairy, no alcohol, no bread, greatly decreased sugar and salt.     Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence. Also, I noticed a white pimple on the tip of my tongue, and this was a confirmation that there was maybe too much stimulating energy in the heart (according to oriental diagnosis of the tongue).     Q: I noticed the CARDIO-VASCULAR FORMULA contains garlic. My partner would like to participate in the detox program with me, but she has allergies to garlic that make her very sick.     Q: I wrote to you a couple weeks ago asking if it was normal for me to have an outbreak only a day or two into the full body cleanse kit. You wrote back and told me that an outbreak is the body healing. It is two weeks later and I am still having an outbreak! Is this a good sign?     In regards to what you ate, YES, they make the cleanse less effective, so you may not want to eat much of cooked foods. Raw foods will optimize the cleanse. If you are having trouble staying full, try more healthy fats, like avocado, coconut cream, or raw nuts and seeds.

    Q: Peace. First off I would like to say that I am in love with your site. I started my children on a vegan diet last year, but they're lacking a very large amount of nutritional needs, including myself.     Q: What's the best way to start on a vegan/raw food diet?     If I do say myself, the best way to start a raw food diet is to be coached by me.     Q: I'm on my 9th day of the FULL BODY DETOX which I am performing to heal from genital herpes. I am also am suffering from a yeast infection at the moment.     Q: I have a question for you. I love reading your articles and I was reading about the importance of iodine in a vegan diet. I am vegan and I'm scared I'm getting iodine and you wrote that seaweed would fulfill that need. Did you mean Sushi seaweed, the roasted nori kind? Or fresh seaweed? I haven't been able to find fresh seaweed anywhere, except for already prepared seaweed salad. Also, how would you suggest I use the roasted nori seaweed? In smoothies? Because by itself it does not taste good.
