Chia Seed Pudding Recipe

Since preparing this pudding for the first time last year, it has become a staple in my fridge. This simple dessert has won many praises at an office potluck, wowed a few guests at dinner parties, and has been a highly requested recipe from coworkers and friends. If you’re searching for a no-cook treat that’s light, refreshing, and healthy, your search can come to an end with the Chia Seed Pudding!

Chia seeds are native to central and southern Mexico and Guatemala but are now largely grown in Australia. You might have seen these little black seeds floating in agua frescas served at Latin American restaurants before. In each tablespoon of dried seeds, you’ll find 6g of fiber, 3g protein, and 2.9g of omega-3 fatty acid. And yes, chia seeds are the precursors to the green grass on ch-ch-ch-chia pets.

Chia Seed Pudding (Makes 4 generous servings or 6 petite servings)

Ingredients:

  • 1/2 C chia seeds (available at health food stores and grocers like Trader Joe’s and Sprouts)
  • 2 1/2 C vanilla-flavored sweetened almond milk (can substitute with soymilk, rice milk, or hemp milk)
  • 1/2 C sweetened shredded coconut, lightly toasted in skillet or in toaster oven using shallow pan
  • Diced mangoes, strawberries, and/or pineapple. Blueberries and cherries work well, too.

Directions:

1. To a quart-size or larger container (more convenient if it has a matching lid), add chia seeds, shredded coconut, and almond milk. Stir well with fork so chia seeds are submerged in liquid and reduce formation of lumps. Some seeds will like to float, and that’s perfectly OK.

2. Once well-stirred, cover with lid and put in fridge. Refrigerate at least 4 hours, overnight preferably. Before serving, stir mixture to make sure no lumps of chia seeds are settling on bottom.

3. To serve, spoon mixture into bowls and top with choice of fruit.

Note #1: If you like your pudding to be looser, add 1/2 to 1 more cup of almond milk to the mixture. Refrigeration and time are essential for this pudding since chia seeds soak up a lot of liquid and gel up when given time. This pudding keeps well in fridge up to a week.

Note #2: The amount of sweetness is just right when using both sweetened milk and shredded coconut plus the fresh fruit. If you usually have unsweetened milk on hand, no need to buy a sweetened carton just for this recipe. Simply swirl in some agave nectar or honey after the mixture sets.

    Q: Members of my house have started drinking Hemp Milk and Rice Milk. No more Cow Milk! We like the taste of both. I also like the fact that the hemp milk has omega and other nutrients in it. However, my son is three years old and we have discovered he is allergic to nuts because a family member gave him a cashew to eat, then his eyes began to swell up like Garfield the cat. I had him tested for food allergies and the test revealed he is allergic to nuts and soy. So I don't give him any nut products or soy products. My question for you is: "Is hemp a nut or a seed, is the hemp milk derived from a nut or a seed???" I need to know other alternatives if in fact it is a nut. I do not want to give him something toxic to him.

    Hemp is a seed, not a nut, so hemp seed milk is okay for him.

    Nuts cashews - peanuts, soy

    Grains - rice, oats

    Fruit - almond, coconut, banana, date

    Q: I purchased the children's detox and received it a couple of days ago. After reading the pamphlet that came with it, I was wondering where/what kind of milk can I purchase for my baby while she is on the detox? For example it said almond, soy, rice milk... can I buy the regular boxed almond, soy, rice milk? Or if I am going to use coconut milk, can I use the canned coconut milk?

    Yes, you can use almond, coconut, or any other nut milk. We do not reccomend soy.

    Q: Several people in the conscious community have stated that adding flax seeds and/or flax seed powder to our diet benefits the colon for complete and clean bowel movements. My question is, does flax seed powder or the seeds themselves promote parasites in the stomach and colon? A few of my friends and I have completed the parasite cleanse and got into a debate about it.     Flax seed undoubtedly helps the colon (due to fiberous nature) but it is absurd to think or suggest that flax seeds (in any form) promotes parasites. Meat, dairy, refined grains and other processed foods is what promotes parasites in the stomach, colon, and rest of the body. So, as Public Enemy would say: "Don't believe the hype!"

    Q: I just ordered the FULL BODY DETOX and I know there's a dietary regimen that I will have to follow. I was wondering if you would approve of a protein shake that consist of (raw hemp protein powder, raw almond butter, sea salt, flax seed, 100% young coconut water & meat inside the coconut, raw carob powder,) (optional soy or rice milk or soy or rice cream)

    Doesn't sound like it will mess up your FULL BODY DETOX. Go for it! But leave out the rice/soy cream! The rice milk is okay (but it is processed/cooked)!

    Eating small seeds like chia and flax seeds can go through digestion whole and be wasted. Soaking, sprouting, and grinding before consumption increases the likely hood that the small seeds will get digested and their nutrients utilized properly.

    Q: I am trying to wean my 11 month old son from breast milk to rice milk. I was told that rice milk did not have sufficient amounts of vitamins. What do suggest that I supplement with the rice milk. He is not tolerant of soy.

    Q: I see also that you recommend a complete diet with these programs. I am guessing its a vegan diet right? I wanted to ask something on that is coconut milk and coconut oils ok for that? I personally had a very hard time trying to eat that many vegetables and many ph balance vegans seem to think fruits aren?t good either. I eat that many vegetables one it tears me up the next day and two I just cant consume enough calories that way. I can try and make up for it by eating things like almonds but I eat to many almonds I get the same problem the next day. Now coconut milk (unsweetened) and a digestive enzyme works for me for picking up extra calories.... but I hear very conflicting information about coconut and its saturated fat content. Is it ok to use daily as a part of the diet for cleansing? And your oxy-drops are those the same as the drop for ph balancing water?? Or is it something different? I am wanting to start lifting weights as I need to put on some muscle and I?m wondering if its something that would be beneficial in combating muscle soreness by increased oxygen in the body.

    The diet we recommend is vegan-based, and RAW FOODS. Fresh fruits, vegetables, raw nuts and seeds are ideal.

    Anything canned is going to be acidic. What ever you use for make, let it be raw. Raw coconut milk fresh from the coconut is alkaline.

    Q: I have ordered the detox cleanse, and the weight cleanse. Both state to eat a raw diet of veggies and fruit, nuts, nut pastes??, legume sprouts, seeds, plant oils, sea veggies??,and fresh juices. It mentions Vegan Diet. What are my options when it comes to these choices? What do I eat and how often to keep my sugar from dropping, and feeling sick? Usually mid am, and mid afternoon?

    The best way to balance blood sugar and keep your body in a fat burning zone is to eat low fat and every 3-4 hours. Also high raw and high carb. Here are some options. Just a general outline.

    Raw wraps-raw pasta-salad with legumes

    The answer is both. In different ways. Hemp is of course a great source of fat. It has a tremendous ratio of omega 3s to 6s. It helps rebuild muscle because it is anti inflammatory, It helps build muscle by being 33 percent protein by content and a great source of calories for fuel. It's probably best to take hemp seeds, protein powders, butters, oils with greens to enhance bio-availabity and useability. I use hemp seeds in my green smoothies and use a variety of other small seeds in my meals. I do not use oils of any kinds and nut/seed butters occasionally. I prefer not to use hemp protein powders just because I find them gritty in shakes and not the best tasting. There are plenty of other raw protein sources I find more palatable.

    Q: Do you have any herbs for baby reflux? My daughter gives her baby boy soymilk. I told her soy milk makes mucus among other reasons. What other alternative for soymilk other than breast milk?

    Make a tea using anise seed and/or caraway seed, sweeten it with maple syrup, and add a little lemon and put in a baby bottle and give to the baby. However, remove the acid foods. Tell her to use hemp, almond, or rice milk. They are far better than soy milk.
