Chocolate Cupcakes with Strawberry Filling

Rich and chocolatey, these cupcake hide a fruit surprise inside!

These cupcakes are fluffy and richly flavored, with a sweet surprise in the center. They’re also healthier than your average cupcake recipe, since they leave out the dairy. Yet you’d be hard pressed to guess they’re vegan!
 
The cupcakes feature a strawberry filling, but you can change this up depending on what fruits you like best, or that are in season. Everything from berries to apples to mango or peaches would work well as a delightful filling! It is important to note, especially with strawberries, that you want to go organic. Strawberries are high up on the Environmental Working Group’s Dirty Dozen, for produce you definitely don’t want to eat if it is grown conventionally.
 
I recommend you substitute vegetable oil with applesauce for a healthier version. The applesauce adds more sweetness, so if you’re keen on a darker chocolate flavor and aren’t worried about the fat content then go with the oil. You can also try grapeseed oil, or if you’d enjoy a slight coconut flavor with your chocolate, try using coconut oil instead.
 
And finally, these cupcakes taste better after they’ve cooled off, so wait to dive in until they’re at least room temperature. And they’re really best the next day. For some reason, their flavor seems to deepen and they get even more sweet and chocolate-y over the course of a day or two (if they last that long).

Chocolate Cupcakes with Strawberry Filling (vegan)
Ingredients
For the cupcakes, followed by strawberry filling ingredients which starts with strawberries:
  • 3 cups flour (a gluten-free multi-flour blend will also work in place of wheat flour)
  • 6 Tbsp cocoa powder
  • 2 Tsp baking soda
  • 1.5 cups raw cane sugar
  • 0.5 cups brown sugar
  • 1 Tsp salt
  • 10 Tbsl vegetable oil
  • 2 Tbsp freshly squeezed lemon juice
  • 2 Tsp vanilla
  • 2 cups cold water
  • 2 cups fresh diced organic strawberries
  • 0.5 cups raw cane sugar
  • 2 Tbsp corn starch (and maybe 1 extra teaspoon depending on total thickness)
Cooking Directions
  1. Preheat your oven to 350.
  2. In a large mixing bowl, combine flour, baking soda, cocoa powder, sugar and salt until thoroughly mixed.
  3. Form a well in the middle of the dry ingredients. Add the oil (or applesauce if substituting), vanilla extract, lemon juice and cold water. Stir until completely combined and free of lumps.
  4. Grease the muffin tins with oil or nonstick spray, or line with parchment cups. Fill each well to about three-quarters full.
  5. Place the muffin tins in the center rack of the oven and bake for 20-25 minutes.
  6. While the cupcakes are baking, start your strawberry filling. Over medium heat, add the chopped strawberries to a saucepan and stir constantly as they heat up and begin to soften.
  7. When the strawberries are mostly liquid, add the sugar and corn starch. Continue to stir constantly for a few minutes more as the mixture thickens to a jelly-like in consistency.
  8. Remove from heat, transfer to a bowl and allow to cool.
  9. When the cupcakes are done — check that a toothpick inserted in the center of one cupcake comes out clean — transfer the tins to a wire rack to cool.
  10. After the cupcakes have cooled, prepare them for the filling. Using a paring knife, cut a cone out of the top of each cupcake, going deep enough to allow plenty of filling but not so deep that you cut through to the bottom.
  11. Remove the cone and fill the space with the strawberry mix almost to the top but not quite.
  12. Cut the “iceberg” portion off the cone you pulled from the cupcake so you have just the thin disk for the top and replace the “lid” over the strawberry filling. The leftover portions of cupcake cones are perfect for snacking while you work!
  13. Decorate with a little powdered sugar or sliced strawberries, and serve.

    Q: I started my full body detox program yesterday and this morning I stopped into Jamba Juice to get a wheatgrass shot. I also got a pomegranate juice, strawberry, peach and mango drink with a mega green tea boost...I drank maybe about 4 oz of the drink and trashed it. I had the worst headache I've ever experienced in my life! Was it from the sugar in the juice? They claim to be all-natural or was it from the fasting?     Q: I tried Sugar Buster recently, did not have the effect I (thought). Should I continue to use, or is there another product I should consider? My reason for asking is I am about to start a (fat) loss program and I recognize that sweets/chocolate is my problem. Not necessarily food in an of itself.     Q: My daughter, who is 11 yrs old found a 1cm lump in her left breast 2wks ago. She was referred to a specialist and of course they want to surgically remove the lump. I let a co-worker scan the lump and they think it is a non-cancerous fibroandroma (I do ultrasound myself) and I saw a couple of cysts around the area as well.     Q: Hello, I'm on day 3 of the FBC and I'm having a really hard time with sweets. It's even more trying because I work in a bakery which I cannot avoid because it is a family owned business and I, myself do a lot of the baking.     Q: Is sea salt and warm water a good natural laxative? If so how often do you recommend the use of sea salt for elimination? I was reading The Master Cleanser by Stanley Burroughs and it gives this recommendation, along with drinking lemon water mixed with organic syrup and cayenne pepper. Is it safe to give myself an enema 2xs per day using a hot water bottle filled with fresh squeezed organic lemon and distilled water?     Q: I'm doing the Full Body Cleanse and I have a few questions about it: I get tired of drinking just the distilled water and I'd like to drink the herbal teas, but I don't like it by itself. Would it mess things up to add a pack or two of Splenda to my tea or maybe honey? I can't stand the salads with the olive oil or apple cider vinegar or the lemon juice as dressing and it makes me gag. I have To have some sort of salad dressing. What kind would be suitable?     Q: I love to drink water, but I like to drink hot water you know boiling water slightly cooled. Is there a benefit, or disadvantage to this compared to drinking room temperature water? Secondly, the water I drink is boiled water. Alkaline water is not a privilege most Kenyans have. If 56% of the population is living below poverty line you do the math. So the water I drink is tap water, that I boil to make it safe for drinking. When I get to work I have Alkaline water as my work place provides me with that provision.     Q: While doing a candida cleanse, it was told to me that I should be following a raw food diet full of fruits and vegetables. Fruits have high sugar content and can feed a candida overgrowth, as it is a well known fact that candida albicans thrive on sugar. How can I justify eating fruits high in sugar?     A: Yes, when you have a candida issue it's best to avoid refined sugar. Sugar from a natural source like fruits should be consumed moderately.     Q: I just purchased the Pancreas Kit for children, for my 4 year old who was diagnosed with type one diabetes. I have been feeding her a raw diet of just vegetables. The diet includes no dairy, no grains, and fruit for a week. I also started the Pancreas kit last week too. I was wondering if there is any reason why her blood sugar levels would go up? All she is eating is veggies, and her sugar levels are at 300 most of the time. Even if she doesn't eat anything, it still goes up to 300.     Drugs and herbs don't mix! They cancel each other out. The blood sugar will go up and down due to the body attempting to regulate, and normalize the blood sugar levels. Perfectly normal! It's called "healing crisis. Whatever you guys choose to do, simply keep monitoring the person. Ask the person how he/she feels (very important).

    Q: Thanks so much for all the wonderful info! I had a chance to look at some of your products and I like what I see. There is so much good stuff here. I just finished a 60 day sugar/fat cleanse.     Q: Is there such thing as, cleansing too much? From May - July I did a 40 day cleanse. The cleanse was pretty much ridding my diet of refined sugar, flour, alcohol, and animal product for much of the time.     Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence.
