Curried Beet and Kale Soup Recipe

Borscht, the traditional Ukrainian beet soup, gets a vegeterian makeover in this spicier and much lighter version that uses the pink root vegetable as its base. Hearty but healthy, this curried beet and kale soup recipe will warm you up on an early spring evening, with garlic bread or homemade naan acting as ideal dipping devices that will soak up the flavor. The curry flavor may even convert some of your beet-avoiding friends and family, as it balances out the earthy sweetness of this phytonutrient-rich root crop.

Kale, the calcium, iron and fiber-rich brassica that has turned into the health food of this decade, adds texture and nutrition to this soup, but can be substituted with other leafy greens if you can’t quite stomach it. The recipe offers the option of either sautéing or steaming the greens very lightly before topping off the soup, as they will continue to cook once placed on the hot soup. Sautéing the kale will result in added flavor, whereas steaming will offer a lighter option.   

Serves 2-3

Ingredients

3 medium organic beets
1 large or 2 medium organic potatoes
1 tablespoon organic safflower or sunflower seed oil
¼ cup organic onion, chopped
2 garlic cloves, chopped
2-3 cups water
1 tablespoon organic lemon juice
2 teaspoons organic curry powder
2 teaspoons organic turmeric
2 teaspoons organic paprika
1 teaspoon organic lemon thyme
½ teaspoon cayenne powder
salt and pepper to taste

Make garnish with:
1 tablespoon organic safflower or sunflower seed oil
2 cups organic kale, finely chopped

Method

Wash the potatoes and beets, peel the beets (you can peel the potatoes if you wish) and chop both vegetables into large chunks. Place them in a steamer and steam for 15-20 minutes, until tender. Meanwhile, chop the garlic and onions and heat the safflower or sunflower seed oil in a medium size pan. Sauté the garlic and onions until slightly browned. Place the beets, potatoes, onions and garlic in a blender or food processor, add the water and lemon juice, and blend to a smooth consistency. Transfer the blended vegetables into a medium size pot and stir in spices. Let simmer for 30 minutes to two hours.

Five minutes before taking the soup off the stove, chop the kale and sauté it lightly with olive oil. Alternatively, steam the kale for 1 minute. Ladle the soup into bowls, top generously with kale.

    Yes, sea salt in water is a mild laxative!

    You can do it as often as you FEEL the need to drink or take it. 

    You can also consume the Master Cleanse (cayenne, maple syrup, lemon juice) if you choose. You can drink this as much as you like depending on how you feel.

    And yes, you can perform enemas 2X a day! Enemas are very helpful for health!

    Q: Hello I am currently on the full body detox and I have a question for you. How do you feel about organic chicken from a credited organic food store? I was wondering if eating organic steamed chicken was ok and whats your take on almond milk.

    Animal products are not part of the detox program. The detox protocol is a raw food detox as well. Most if not all food should be consumed raw. Organic meat is a double edged sword. On one hand you have an animal pumped full of anti biotics and on the other hand you have an animal refused antibiotics if they are sick. Which they routinely are being that they are crammed in sheds. The amount of land required by the USDA to be considered free range is the size of a sheet of printer paper. Birds kept in such close quarters communicate diseases fast. I do not recommend any animal products when on a detox. 

    The main issue with detoxing is lessening the workload of the livers and kidneys so they can clean house. Animal protien is acidic to the body and forces the body to work overtime digesting the excess protein. 

    Almond milk is fine if you make it yourself. Its really not that hard to do if you have a good blender. If you can't blend it yourself you can buy it from the store but remember that it's pasteurized and probably has added sugars which you want to avoid.

    Organic salad dressing is a healthy alternative, but because they're bottled they usually contain preservatives to sustain their condition on store shelves. We recommend sticking to raw and fresh ingredients like using extra virgin olive oil as a base for homemade dressings. Adding apple cider vinegar, lemon juice, sea salts and other spices are common ingredients for homemade dressings.

    Q: I started my Full Body Cleanse today do I have to take it at those times specified? Also it is recommended to eat raw, however I never saw Organic mentioned. Organic is extremely costly here in Philly and you have to go a distance to get organic. What do you suggest?

    No, you don't have to take it at the specified times. It's just a reference to give you an idea of how to spread out taking the individual formulas.

    Eating organic food is best, but not prescribed as we all don't have access to organic foods. As long as you stay RAW, you should still receive the benefits of the cleanse.

    Q: I wrote to you a couple weeks ago asking if it was normal for me to have an outbreak only a day or two into the full body cleanse kit. You wrote back and told me that an outbreak is the body healing. It is two weeks later and I am still having an outbreak! Is this a good sign? Do you think this outbreak may continue on through my anti viral kit?     The outbreak is a result of your body trying to eliminate the toxicity and impurities from your body. Continue to follow the guidelines of the Cleanse.

    In regards to what you ate, YES, they make the cleanse less effective, so you may not want to eat much of cooked foods. Raw foods will optimize the cleanse. If you are having trouble staying full, try more healthy fats, like avocado, coconut cream, or raw nuts and seeds.

    Q: I'm doing the Full Body Cleanse and I have a few questions about it: I get tired of drinking just the distilled water and I'd like to drink the herbal teas, but I don't like it by itself. Would it mess things up to add a pack or two of Splenda to my tea or maybe honey?     1. Instead of splenda, use agave, stevia, or grade b maple syrup as a sweetener.

    2. In re Salad Dressing, an organic and natural one is great. You can also check our website for salad dressing recipes.

    3. The fiber pills are not part of the cleanse, so we wouldn't advise those. Fruit is you best choice of fiber so look into eating more papaya, mango, figs, etc. And yes, colonics (and enemas) would greatly help you - undoubtedly!

    4. You can do the Female Cleanse right after you finish detoxing. There's no need to wait!

    Q: I am in need of cleansing my body and weight removal! (Removal and not loss because I don't want to find it again)! I need to remove about 80 pounds of unhealthy weight from my body and would like to do so in a natural way.     Q: Can I lightly sauté in Olive oil or steam my raw vegetables occasionally on the Full Body Cleanse? This is my second day on the cleanse and I am having a hard time eating crunchy vegetables.

    Hi, and thanks for the question.

    It is best to avoid oil for the cleanse and future dieting. Oil slows down digestion, reduces blood flow up to 30 percent for 3 hours after digestion, and is essentially a ton of calories with little to no nutrient value. When you sauté vegetables in olive or other oil you are turning a low calories highly nutritious food into a high calorie and low nutrient dense food.

    Steaming is an ok option if done lightly. When you steam vegetables you do reduce nutrient value and destroy some enzymes. If you do you will lessen the impact of the cleanse to a degree but I would rather you eat the vegetable than not at all. The benefit of eating the vegetable lightly steamed is better than avoiding the vegetable.
