Curried Carrot and Parsnip Soup

This flavorful soup is a great way to give new life to any leftover roasted veggies you might have — it’s creamy with a little heat from the curry powder and makes a terrific meal alongside some crusty bread and a simply dressed green salad.

CURRIED CARROT AND PARSNIP SOUP [VEGAN, GLUTEN-FREE]

INGREDIENTS

  • 2 cups roasted carrots and parsnips
  • 2 cups vegetable stock, divided
  • 1 cup unsweetened applesauce
  • 1/2 onion, cut into large dice
  • 1/4 teaspoon curry powder (I used hot curry for some spice, but you can use sweet curry as well)
  • 1 tablespoon olive oil

PREPARATION

  1. In a small saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until onion is tender, about 3-4 minutes. Sprinkle on the curry powder and stir to combine. Cook the onion mixture for an additional minute until warm and fragrant. Add 1/2 cup vegetable broth and cook for an additional 2-3 minutes until onions are softened. Set aside.
  2. In a blender add the leftover roasted vegetables and the remaining broth. Puree until smooth. Add the applesauce and blend again to combine. Add the curried onions and process until smooth. If soup is too thick add a little vegetable broth to thin it out.
  3. Pour the soup into a saucepan and warm over medium heat. Serve.

    Q: In the Full Body Detox booklet it states I can have wild rice if I need something warm. I really don't like wild rice, but can I make myself a vegetable soup which I prefer. To me its more filling then the rice.

    You can eat cooked food as much as you like. However, try to incorporate as many nutrient-dense raw foods, such as fresh fruits and vegetables, raw nuts and seeds, into your diet to make sure you are receiving an adequate amount of nutrients.

    Q: I'm a male who has HPV. Now when I was around the age of 17 to 18 I notice the warts. My "Doctor" told me it "could" be from heat, or sweating in that area.     Q: I was wondering if it is okay to mix Mrs. Dash season blend with Olive Oil as a dressing for my salad?     Q: I have a question for you. I love reading your articles and I was reading about the importance of iodine in a vegan diet. I am vegan and I'm scared I'm getting iodine and you wrote that seaweed would fulfill that need. Did you mean Sushi seaweed, the roasted nori kind? Or fresh seaweed? I haven't been able to find fresh seaweed anywhere, except for already prepared seaweed salad. Also, how would you suggest I use the roasted nori seaweed? In smoothies?     Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence. Also, I noticed a white pimple on the tip of my tongue, and this was a confirmation that there was maybe too much stimulating energy in the heart (according to oriental diagnosis of the tongue). When I eat sun baked bread, I automatically feel heat in the body. So I'm wondering if this is a good food to continue with or not.     Q: Can I lightly sauté in Olive oil or steam my raw vegetables occasionally on the Full Body Cleanse? This is my second day on the cleanse and I am having a hard time eating crunchy vegetables.

    Hi, and thanks for the question.

    It is best to avoid oil for the cleanse and future dieting. Oil slows down digestion, reduces blood flow up to 30 percent for 3 hours after digestion, and is essentially a ton of calories with little to no nutrient value. When you sauté vegetables in olive or other oil you are turning a low calories highly nutritious food into a high calorie and low nutrient dense food.

    Steaming is an ok option if done lightly. When you steam vegetables you do reduce nutrient value and destroy some enzymes. If you do you will lessen the impact of the cleanse to a degree but I would rather you eat the vegetable than not at all. The benefit of eating the vegetable lightly steamed is better than avoiding the vegetable.

    Q: Can you combine Vegetables (green leafy) with Vegetables (fruit-vegetables)? Are fruit-veggies considered fruit or veggie?

    Green leafy veggies may be combined with fruit-veggies (cucumbers and tomotoes). Fruit-veggies are really fruit. You can always tell because of the seeds. Technically, anything that contains seeds is a fruit!

    Q: I started the full body detox today, and found that I DO NOT like the salad dressing I made with the olive oil, apple cider vinegar and lemon juice. I found I could not tolerate it on my salad. What can I do instead? Another question is... I noticed lentils on the food combining chart. Those have to be cooked. Are those actually allowed to be consumed warm? I love the raw fruits and vegetables. I don?t have a problem, cause I love salads. I just need help on what I can have on it.

    Q: My friend who recommended the full body cleanse said I should contact you. I'm getting very bad reactions to the charcoal powder.     A: Cooking foods takes out the nutrients and enzymes that are beneficial to our bodies, so eating food in it’s most natural state is best. Unfortunately there's no alternative diet to the regimen. The herbs work in conjunction with the raw food diet. You would need to consume some vegetables while on the cleanse.     Q: Can you make a formula for those of us who are experiencing hot flushes? I was thinking of a topical formula like Icy Hot but with out the Hot. We could just dab it on our skin to give a sensation of cold to counter the internal heat.
