Easy Weeknight Meal: Kimchi Fried Rice

Kimchi is one of my favorite snacks. Not only does it taste great, but it’s also a natural probiotic and helps regulate gut health. It’s filled with vitamins A, B, and C and has lots of antioxidants that help to prevent cardiovascular disease and cancer. It also contains calcium for metabolic pathways and strong bones and iron for anemia.

Here’s an easy weeknight meal that’s way better then calling up your local delivery guy: Kimchi Fried Rice

Ingredients:

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, thinly sliced
  • 2 green onions cut into 1 inch pieces
  • 2 cups vegetables or tofu cut into small pieces
  • 3 cups cooked and refrigerated rice (day old is best)
  • 1 cup drained and chopped kimchi (squeeze out most of the moisture)
  • 1/2 teaspoon sesame oil
  • 3/4 teaspoon Kosher salt
  • optional: chili paste, if your kimchi isn’t spicy enough (kochujang paste is ideal)
  • optional: 1 fried egg per person (sunny side up, runny yolks)

Directions:

Preheat a large cast-iron skillet over maximum heat. Add the oil, and immediately follow that with the garlic and green onions. Stir fry for 20 seconds.

Add vegetables or tofu and stir fry until cooked through (vegetables) and lightly browned (tofu).

Add the rice and toss to coat with the oil. Continue to fry over high heat, tossing only occasionally and mostly letting the rice stay in contact with the pan so that it has time to brown.

Add the kimchi, sesame oil, salt and optional chili paste and stir fry for one more minute.

Serve immediately, topped with the remaining green onion and the fried egg if you are using it.

    Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence. Also, I noticed a white pimple on the tip of my tongue, and this was a confirmation that there was maybe too much stimulating energy in the heart (according to oriental diagnosis of the tongue). When I eat sun baked bread, I automatically feel heat in the body. So I'm wondering if this is a good food to continue with or not. Isn't it more "neutral" (in terms of energy) to include a small portion of cooked brown rice along with the raw regimen?     Q: I just ordered the FULL BODY DETOX and I know there's a dietary regimen that I will have to follow. I was wondering if you would approve of a protein shake that consist of (raw hemp protein powder, raw almond butter, sea salt, flax seed, 100% young coconut water & meat inside the coconut, raw carob powder,) (optional soy or rice milk or soy or rice cream)

    Q: In the Full Body Detox booklet it states I can have wild rice if I need something warm. I really don't like wild rice, but can I make myself a vegetable soup which I prefer. To me its more filling then the rice.

    Q: Today makes day 9 of my FULL BODY DETOX (FBD). This morning I have an outbreak on my hand. I have been practicing telling myself I am Healing, but my job is stressful and yesterday I had a stressful day and this morning the outbreak on my right hand. Could this be part of my healing process? Can you suggest what I can do to alleviate the stress at work so this will not block my healing process of herpes? I am following the diet; however I have been kind of burnt out at times on the salads so I at least eat a salad and a bowl of steamed brown rice and frozen green peas that are steamed for 3 min. Is that considered following the diet? I still eat my fruit for breakfast daily, my salad for lunch and steamed broccoli (5min) and for dinner another salad, but for a few days I have eaten the rice and steam green peas. I basically want to know is it alright so if I eat it in the future.

    You have to learn to deal with your stress and stop reacting to it. Your subconscious mind is greatly blocked and therefore you have to realize your healing will come very slow. At a deep level you still believe herpes is incurable and your body is giving you this (despite the healing crisis of outbreaks on the hand). Your dietary deviation is understandable and not that bad but if you are tiring of salads opt for other things to eat.     Q: Hello, I have the herpes virus that occasionally causes me to get a cold sore about once a year. I eat very healthy i.e. no dairy, fried foods, red meat etc. What do you recommend as a cure for this virus.     Q: I have a fried who was told he has a heart murmur, and a small hole in his heart that is leaking. He needs to get surgery to get the whole closed up, or else it can get worst. He has severe chest pains, and his right shoulder hurts him constantly. They say it is because no blood is pumping to his arm at a steady rate because of his heart.     Q: I recently purchased your Parasite and Worm Kit and wanted to know what grains were good to eat during or after the cleanse.     Q: Members of my house have started drinking Hemp Milk and Rice Milk. No more Cow Milk! We like the taste of both. I also like the fact that the hemp milk has omega and other nutrients in it. However, my son is three years old and we have discovered he is allergic to nuts because a family member gave him a cashew to eat, then his eyes began to swell up like Garfield the cat. I had him tested for food allergies and the test revealed he is allergic to nuts and soy. So I don't give him any nut products or soy products. My question for you is: "Is hemp a nut or a seed, is the hemp milk derived from a nut or a seed???" I need to know other alternatives if in fact it is a nut. I do not want to give him something toxic to him.

    Q: I am a medium brown colored black male, age 41. I am conscious about what I eat. However, I am experience spotty scalp discolorations on my head scalp and neck area.
