Eder’s Avocado Salad Recipe

The Basque region of Spain is both incredibly beautiful and rich in great food, so when The Basque Book by Alexandra Raij, Eder Montero, and Rebecca Flint Marx came across our desks, we were immediately excited to take a peek.

The following recipe takes a simple avocado and turns it into a stunning starter with a few simple, high-quality ingredients. We might not be able to get paprika quite as special as the one Alexandra and Eder used, but hopefully we can capture some of the magic of this dish in our own kitchens.

Every summer when we visit the Basque country, Eder’s great aunt Mila gives us baby-food jars filled with the most extraordinary paprika from Rioja.

Made by her friend, it is fruitier than pimentón de la Vera, and the smoke is more delicate, which is why the long bus ride to pick it up is more than worth the trip.

When those jars start to run out, we get nervous. They are what make good food great at our house.

One evening, Eder halved an avocado, seasoned it with salt, and dusted it generously with the Riojan paprika. Embellished with a little sweet vinegar made from the Basque white wine vinegar Txakoli and enough olive oil to dissolve the paprika, it was a genius salad with pitch-perfect flavor.

Calculate half an avocado per person, although I guarantee you’ll end up eating both halves if you make it for yourself.

Eder’s Avocado Salad

Serves 6

Ingredients

  • 3 ripe Hass avocados, halved and pitted
  • 1½ to 2 tablespoons Txakoli wine vinegar, white balsamic vinegar, or seasoned rice vinegar
  • 3 tablespoons smoked Spanish paprika, preferably from Rioja, or 2 tablespoons sweet La Vera smoked paprika mixed with 1 tablespoon sweet Spanish paprika
  • Maldon salt
  • About ¼ cup extra-virgin olive oil

Preparation

1. Thinly slice an avocado half and arrange the slices on an individual salad plate. Do not fan the slices; they should be close together. (You can also just peel the half and lie it cut side down on a plate.) Repeat with the remaining avocado halves.

2. Drizzle each half with about ½ teaspoon of the vinegar. Using a small fine-mesh strainer or a shaker, dust each serving with a thin layer of paprika. Season with salt, drizzle generously with the oil—you want enough oil to dissolve the paprika and give each half the appearance of a rusty car door—then serve.

    Q: I started the full body detox today, and found that I DO NOT like the salad dressing I made with the olive oil, apple cider vinegar and lemon juice. I found I could not tolerate it on my salad. What can I do instead? Another question is... I noticed lentils on the food combining chart. Those have to be cooked. Are those actually allowed to be consumed warm? I love the raw fruits and vegetables. I don?t have a problem, cause I love salads. I just need help on what I can have on it.

    Q: Thanks for your article about vinegar. I was just going to use it regularly with honey. Can you use it on your skin though? I was wondering if the acidity would be good for wrinkles or acne.

    Glad you enjoyed the "Vinegar" article. I don't recommend vinegar on the skin. However, a little inn bath water won't hurt (say about half a cup). I recommend Oz-Oil for the skin. Oxygen is what the skin needs.

    Q: I was reading your article about vinegar being harmful to the body because of its acids and I was curious to know what you think of the Organic unpasturized, unfiltered apple cider vinegar with mother? I saw that at the end of the article it stated that "if you must" use vinegar to use the organic apple cider vinegar but, I have read many places that it has many health benefits such as reducing bad cholesterol, regulating blood pressure, eliminating toxic waste from the body, fighting fungal and bacterial infections, helping relieve joint pains, breaking down fat which helps in natural weight reduction.

    Q: I have other food combinations that I’m kind of confused about on the e book, this is my first time learning to combine food 1. can I add this to my salad a. Tomato (I think the answer is no) b. cucumber (the 3 below are under proteins, @ the bottom is says that you can mix them with vegetables but in the same sentence it’s also says you cant mix them with proteins...it’s a bit confusing to me) c. cashews or walnuts d. avocado

    You can add these to your salad! They are exceptions because you are eating them in a salad and tomatoes and cucumbers are veggie-fruits, so they are okay! Avocadoes, tomatoes, cucumbers, etc are okay in your salad!

    Q: Hello I am on day TWO of 10-DAY SUPREME COLON CLEANSE;. May I eat a half cup rolled organic rolled oats a day. I eat the oats to provide fuel just before my two hour core ,spinning and rowing class. May I continue to drink Ivy's drink ?     You are free to eat as you please via free will. But we suggest the eating recommendations for a reason. The oats are okay (except they create mucus) and the Ivy's Drink is okay (nothing adverse to the cleanse)and sounds like a pretty healthy tonic.

    A: We have numerous raw salad dressing recipes available on our recipe section. The salad dressing you tried, might be better with apple cider vinegar instead of lemon juice in addition to adding the sea salt and herbs & spices of your choice.

    Q: Thanks for the great web site! MY question is what's the best way to get sodium. I thought un-refined sea salt was the best, but the salt article says "eat this salt only if you must." The great thing about pure sea salt is that it all or almost all the minerals the body needs! So what's the best way to get all the mineral and to stay in balance? Also is there a way to get Epsom salt that is sodium sulfate not magnesium sulfate? Is it a good idea to bath in the "good" Epsom salt.

    The best way to get sodium is via vegetables (i.e. celery).

    Sea salt is great source of sodium, but its a secondary source as it has to be processed from ocean water. Absent the process, it would not be available.

    But it does provide minute amounts of trace elements.

    In re Epsom salt, I haven't been able to find the sodium one.

    I stopped using Epsom salt many years ago.

    You could bath in the good Epsom salt, but sea salt is far better and more natural.

    Q: I recently purchased your Parasite and Worm Kit and wanted to know what grains were good to eat during or after the cleanse. I eat Bulgur, brown rice, black rice, couscous, gold and brown flax seed and ground provisions i.e. yams, sweet potatoes, pumpkin, turnips and etc. Are these ok to eat during the Parasite and Worm Kit or after?     Stay RAW while removing the parasites! If you stay mostly RAW, then on a few days you can engage yourself in some of the foods you mention below (maybe once a week)! But RAW is best! Apple Cider Vinegar is the BEST vinegar to use!

    Organic salad dressing is a healthy alternative, but because they're bottled they usually contain preservatives to sustain their condition on store shelves. We recommend sticking to raw and fresh ingredients like using extra virgin olive oil as a base for homemade dressings. Adding apple cider vinegar, lemon juice, sea salts and other spices are common ingredients for homemade dressings.

    Q: I am on day 4 of the FULL BODY DETOX and was wondering what else can or should I eat besides toss salad and fruits and veggies.     Q: Is sea salt and warm water a good natural laxative? If so how often do you recommend the use of sea salt for elimination? I was reading The Master Cleanser by Stanley Burroughs and it gives this recommendation, along with drinking lemon water mixed with organic syrup and cayenne pepper. Is it safe to give myself an enema 2xs per day using a hot water bottle filled with fresh squeezed organic lemon and distilled water?     Yes, sea salt in water is a mild laxative!

    You can do it as often as you FEEL the need to drink or take it. 

    You can also consume the Master Cleanse (cayenne, maple syrup, lemon juice) if you choose. You can drink this as much as you like depending on how you feel.

    Q: I'm doing the Full Body Cleanse and I have a few questions about it: I get tired of drinking just the distilled water and I'd like to drink the herbal teas, but I don't like it by itself. Would it mess things up to add a pack or two of Splenda to my tea or maybe honey?     1. Instead of splenda, use agave, stevia, or grade b maple syrup as a sweetener.

    2. In re Salad Dressing, an organic and natural one is great. You can also check our website for salad dressing recipes.

    3. The fiber pills are not part of the cleanse, so we wouldn't advise those. Fruit is you best choice of fiber so look into eating more papaya, mango, figs, etc. And yes, colonics (and enemas) would greatly help you - undoubtedly!

    4. You can do the Female Cleanse right after you finish detoxing. There's no need to wait!

    Q: I am on my 3rd day of the fully body cleansing. I am definitely doing this to lose weight. I am a 52 year old, black, Christian, wife, mother to 21 and 14 year old girls, legal secretary who is 450 lbs. I am to the point now where if I don't do this I'm going to be housebound. I can barely move some days that is why I started this because I feel so unhealthy. I have a question about the nuts. I got all gun-ho and ordered $135.00 worth of organic nuts from nuts.com. I got raisins, pumpkin seeds, sunflower seeds, almonds, walnuts, pecans, pistachios and cashews and mixed them all up together (well I purchased 2 lbs of each but I only mixed up 1 lb of each together). Anyway, I was reading about how much calories are in nuts. Should I not pay attention to that because I was consuming a lot of calories in the first place or do I have to watch how many nuts I eat? I have put some nuts in a sandwich bags and basically filled it up and that is supposed to be my nuts ration for the day. I am also eating fruits and vegetables. So far the fruit have been grapes, grapefruit, red apples, pears, green apples and bananas. The vegetables have all been in a salad: tomatoes, celery spinach leaves, carrots, mixed in balsamic vinaigrette. I only ate the salad Monday night all the other times I have just eaten the fruit and nuts. I am also consuming approximately 75-100 oz of water. Sorry I’m long winded I just wanted you to get the entire picture.

    Nuts are best kept to a minimum if you use them at all. Nuts are extremely high in fat and have the opposite omega 3- omega 6 ratio that is optimal for health. Seeds are best as far as ratios are concerned. Also nuts are truly easy to over eat and cause your nutrient ratios to be off.

     

    A healthy vegan diet is a high raw fruitarian diet. 

    Example:

    Breakfast: green smoothie. (500-1000 calories of fruits blended with a handful of greens and water)

    Bridge: Dates and strawberries (500 calories) 

    Lunch: Salad with low sugar fruits (cucumber, tomato, squash, bell peppers) topped with fruit, beans, psuedo grains, 

    Bridge: 2-3 apples

    Dinner: Raw wraps (collard greens) with low sugar fruit and tahini

    Snack: Sorbet

    Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence.     Q: Good Morning, hope all is well. My 11 yr. old son has a serious problem! The skin between his toes on both feet are peeling, and he has sores. The rest of his feet look fine. Also, on his arms & legs he has black spots. As if he had a mosquito bite, and scratched it. But that's not the case. What is this?
