Garlic Quinoa with Ginger-Coriander Sauce

Cheers to hearty food that won’t give you indigestion and comfort food that won’t put you in a food coma. This dish is the perfect balance of hearty and satisfying and healthy and clean.

This dish is a modification of Aushak (or Ashak), an Afghan dish traditionally made of meaty tomato sauce over pasta dumplings. It’s a beautiful thing.

 

Garlic Quinoa With Ginger-Coriander Sauce

Serves 4-6

 

Ingredients for Sauce

  • 2 Tbsp. olive oil (30ml)
  • 1 onion, chopped (240g)
  • 6 garlic cloves, minced
  • 1 heaping Tbsp. peeled and diced ginger (12g)
  • 1 Tbsp. coriander powder (12g)
  • 1 tsp. sea salt (6g)
  • 6 cups mushrooms, sliced (440g)
  • 1 cup water (235ml)
  • 1/4 cup tomato paste (65g)
  • 20 turns fresh black pepper

Ingredients for Quinoa

  • 2 1/4 cups cooked quinoa (350g) (see recipe below)
  • 1 Tbsp. olive oil
  • 4 garlic cloves, minced
  • 2 green onions, chopped (use green and white parts)
  • 2 Tbsp. fresh mint, chopped (6g)
  • 1/4 tsp. sea salt (1.5g)
  • 10 turns fresh black pepper

Directions for Sauce

Heat oil in a pot and cook the onions for 5 minutes until golden brown, on medium heat.

Add the garlic, ginger, coriander, salt, mushrooms and half of the water.

Cook for 3 minutes and then add the tomato paste and the other half of the water and stir.

Cook for 10 minutes, stirring intermittently so that the mushrooms don’t stick to the bottom of the pan.

Add salt and pepper, turn off heat and set aside.

Directions for Quinoa

Heat the olive oil in a skillet and saute the garlic, green onions and mint for two minutes on medium / low heat.

Add the quinoa, salt and pepper and cook for 2 minutes, stirring occasionally.

Assemble

Place a portion of the quinoa on a plate and top with the gravy.

Garnish with fresh mint and red pepper flakes.

To make the quinoa

You can make the quinoa a day in advance to cut down on time.

Place 1 cup of quinoa (180g) in a pot with two cups of water (475ml).

Bring to a boil, turn heat to medium / low and simmer for 15-20 minutes, until the water has been absorbed.

    Q: Is sea salt and warm water a good natural laxative? If so how often do you recommend the use of sea salt for elimination? I was reading The Master Cleanser by Stanley Burroughs and it gives this recommendation, along with drinking lemon water mixed with organic syrup and cayenne pepper. Is it safe to give myself an enema 2xs per day using a hot water bottle filled with fresh squeezed organic lemon and distilled water?     Yes, sea salt in water is a mild laxative!

    You can do it as often as you FEEL the need to drink or take it. 

    You can also consume the Master Cleanse (cayenne, maple syrup, lemon juice) if you choose. You can drink this as much as you like depending on how you feel.

    Q: I have come across several sites that list quinoa as being in the fruit family but this is very confusing to me since it appears to be a grain. My husband uses it as rice and cereal substitute and I am just wondering if it is mucus forming.

    Eating hot peppers has its benefits but excess consumption may eventually cause harm. It boils down to how often and how much of them you are eating. Organic doesn't make a thing necessarily good to eat. Organic peanut butter is better than regular or inorganic peanut butter but peanut butter is peanut butter and thus hard on the digestive process.

Essentia contains calcium chloride, as well as sodium bicarbonate, magnesium sulfate, dipotassium phosphate. Are all the ingredients in Essentia safe? One would have do an independent test on the water. Dasani is crap and I no longer drink Essentia but it would be my brand of choice of bottled water if I was to purchase water again.

    Q: I was reading your food combination chart and I was wondering if you recommend the eating of organic whole grains, like spelt, millet, quinoa, etc? What about cereal like Ezekiel 4:9?

    You can eat organic whole grains, but not during any of our cleanses. The grains you listed are pretty nutritious, especially the Ezekiel bread which I myself eat from time to time.

    Q: I wrote to you a couple weeks ago asking if it was normal for me to have an outbreak only a day or two into the full body cleanse kit. You wrote back and told me that an outbreak is the body healing. It is two weeks later and I am still having an outbreak! Is this a good sign?     In regards to what you ate, YES, they make the cleanse less effective, so you may not want to eat much of cooked foods. Raw foods will optimize the cleanse. If you are having trouble staying full, try more healthy fats, like avocado, coconut cream, or raw nuts and seeds.

    Q: I noticed the CARDIO-VASCULAR FORMULA contains garlic. My partner would like to participate in the detox program with me, but she has allergies to garlic that make her very sick.     Q: I love to drink water, but I like to drink hot water you know boiling water slightly cooled. Is there a benefit, or disadvantage to this compared to drinking room temperature water? Secondly, the water I drink is boiled water. Alkaline water is not a privilege most Kenyans have. If 56% of the population is living below poverty line you do the math. So the water I drink is tap water, that I boil to make it safe for drinking. When I get to work I have Alkaline water as my work place provides me with that provision.     Q: I am writing you to see if you have any information and remedies for hemorrhoids. I am a Black African male in my 40's. I have changed my diet for the last 3 yrs., no meat, fish, cheese, milk, no dairy, no alcohol, no bread, greatly decreased sugar and salt. I exercise 45 minutes a day, 5 days a week, drink at least 6 glasses of water a day and take lots of vitamin c and a multivitamin but I still have not been able to get rid of the hemorrhoids.     Q: I've been a vegan for 2 years now. I've done the FBD 3 times in these two years, but my urine is still yellow. The only time it is clear is immediately after I drink water (reverse osmosis water). If I miss a day of drinking water, my urine goes back to being dark yellow. Does this mean that my body is still very toxic? Also, is it normal to release urine 5 to 15 minutes after drinking liquids? I would think that water would need to stay in the body for awhile for proper hydration and cleansing.

    From what you wrote I would suggest you start drinking alkaline water (purchase an alkaline water machine, you can find various brands in our e-book "Alternative Diet and Lifestyle Manual"). If you are urinating within 10-15 minutes of drinking water you are not absorbing the water, and thus you require micro-clustered water which an alkaline (and ionizing) water machine does. The great thing about pure sea salt is that it all or almost all the minerals the body needs! So what's the best way to get all the mineral and to stay in balance?     The best way to get sodium is via vegetables (i.e. celery).

    Sea salt is great source of sodium, but its a secondary source as it has to be processed from ocean water. Absent the process, it would not be available.

    But it does provide minute amounts of trace elements.

    In re Epsom salt, I haven't been able to find the sodium one.

    I stopped using Epsom salt many years ago.

    You could bath in the good Epsom salt, but sea salt is far better and more natural.

    Q: My son eats, and 30 minutes or sooner he has to go to the bathroom. He is thin, and doesn't hold food. If he eats he goes. What can he take to try to hold his food a little longer so that we can gain a few pounds. Is this behavior healthy?     Q: I'm a male who has HPV. Now when I was around the age of 17 to 18 I notice the warts. My "Doctor" told me it "could" be from heat, or sweating in that area.
