Any overripe bananas are great for making banana bread; the sweetness is a natural treat without all the added refined sugars. Bananas are one of those super fruits containing an array of health benefits, but for the purposes of this recipe, you just need to enjoy their deliciousness!
This bread is very easy to make. It’s gluten-free, it’s soft and moist, and it’s a great healthy treat.
Gluten-Free Banana and Macadamia Bread
- 1 cup young coconut meat (alternatively use shredded coconut)
- 3 ripe bananas
- 3/4 cup coconut flour
- 1/3 cup apple sauce
- 6 Medjool dates
- 1/2 tsp. vanilla essence
- 1/2 tsp. cinnamon
- 1 tsp. baking soda
- 1/8 tsp. Celtic sea salt
- 3/4 cup macadamia nuts
Preheat oven to 300˚F
Mix all bread ingredient together except for the flour and macadamia on a med setting in a food processor or blender (I wanted the bread to be a bit ‘grainy’ so I chose a lower setting).
Add the coconut flour (note that this is denser than normal flour so you won’t need as much of it when you’re substituting) and mix until it reaches a dough-like consistency.
Fold in the macadamia nuts.
Put into the oven for about 40 minutes.
Leave to cool, then serve with jam or fresh bananas and coconut cream!
