Now that the kids are back to school, pumpkin spice treats are popping up everywhere. And instead of caving into these super sugary treats, why not indulge in a healthy sugar free option to support your health.
I love these moist muffins as we enter fall, which is such a powerful time for reconnecting, recommitting and starting anew. These muffins perfectly hit the sweet spot with out the sugar crash.
Grain-Free, Sugar-Free Pumpkin Spice Muffins
Makes 6 small muffins
- 1 cup pumpkin purée (unsweetened)
- 1 cup almond flour
- 1/2 cup coconut sugar
- 1 egg
- 1 Tbsp. pumpkin spice
- 1 tsp. pure vanilla extract
- 1/4 tsp. baking powder
- pinch sea salt
Preheat oven to 350 degrees Fahrenheit. Line a muffin pan with liners and set aside.
In a large bowl, combine the pumpkin, xylitol, and egg. Beat until fluffy.
Add in the remaining ingredients and stir until combined.
Using a small spoon, spoon the batter into the muffin tins, about 2/3 way full.
Bake for 25-30 minutes. Let cool for 10 minutes.
