Mushroom Lentil Herb Burgers + Clean Slaw

Love burgers but want to skip the bun? Enter the cabbage leaf. This is an incredibly healthy and delicious alternative. The crisp texture of the leaf works perfectly with the soft and flavorful mushroom, lentil and herb burger.

Mushroom Lentil Herb Burgers + Crisp Slaw

Serves 4

For the burgers

  • 1.5 cups beluga lentils
  • 1 large red onion
  • 3 cups chopped wild mushrooms of choice (I used shiitake and maitake)
  • 3 garlic cloves, minced
  • 3 teaspoons coconut oil, divided
  • 2-3 sprigs rosemary
  • 3-4 sprigs thyme
  • 8-10 sage leaves
  • ¼ cup sundried tomatoes (soaked for a few minutes if too dry)
  • ⅓ cup walnuts
  • 2 tablespoons tamari
  • 1 tablespoon olive oil
  • salt + pepper
  • scallion for garnish (optional)

For the coleslaw

  • 1 small red cabbage or ½ of large cabbage
  • 2 carrots
  • 1 green apple
  • 1 tablespoon whole grain mustard
  • 1 tablespoon apple cider vinegar
  • juice of half lime
  • 1 teaspoon maple syrup
  • salt

Preparation

1. Boil lentils in 2.5 cups water until they are soft but not mushy.

2. While lentils are boiling, prepare the caramelized onion. Heat the olive oil on med-low heat, chop onion and sautee with a pinch of sale for approx 15-20 min until onion is brown and beginning to crisp a little.

3. In a seperate pan, heat 1 teaspoon of coconut oil and add mushrooms. Sautee for approx 5 minutes or until they lose some of their water.

4. Add the garlic, chopped herbs, sundried tomatoes, tamari, salt and pepper, and sautee for another 5-7 min. Remove from heat and let cool for a few min.

5. In a food processor, blend the walnuts seeds until you have a fine flour. Add the lentils, mushroom and veggie mixture, and blend until most lentils are broken down and mixture is sticky. Take out from processor and add the caramelized onions, mix well.

6. To form the patties, form the mixture into a ball approx the size of your cupped palm. Press until burger is 1.5-2 inches thick.

7. Heat the remaining coconut oil on med heat and add 3-4 burgers at a time (depending how big your pan is, make sure you leave enough room to flip them). Flip the burgers after 3-4 min on each side and serve warm! Add chopped scallions on top of burgers if you wish.

8. For the slaw, grate or shred the cabbage, carrots, and finely slice the apples. Mix all ingredients for the dressing until emulsified, then add to slaw and mix well.

    Q: I was wondering if it is okay to mix Mrs. Dash season blend with Olive Oil as a dressing for my salad? It tastes real bad with just Olive Oil alone, and I don't like the bitterness taste of lemon juice, and apple vinegar cider.     Q: Is sea salt and warm water a good natural laxative? If so how often do you recommend the use of sea salt for elimination? I was reading The Master Cleanser by Stanley Burroughs and it gives this recommendation, along with drinking lemon water mixed with organic syrup and cayenne pepper. Is it safe to give myself an enema 2xs per day using a hot water bottle filled with fresh squeezed organic lemon and distilled water? Asking this because Bzod had me to listen to 88.3 today here in Cincinnati and the guy (Mike) was telling how he does this regularly and has great results.

    Yes, sea salt in water is a mild laxative!

    You can do it as often as you FEEL the need to drink or take it. 

    You can also consume the Master Cleanse (cayenne, maple syrup, lemon juice) if you choose. You can drink this as much as you like depending on how you feel.

    And yes, you can perform enemas 2X a day! Enemas are very helpful for health!

    Q: Thank you for always answering my questions. I have about two more. Okay, I'm currently living overseas where I'm limited on raw fresh foods (vegetables and fruits). I want to do the detox but I'm concerned that I won't have everything as far as raw food to be successful. I have access to basics (apples, oranges, bananas, tomatoes, avocados, melons, lettuce, cabbage, bean spouts, carrots, celery, peppers, green beans, peas, bagged nuts,) but nothing exotic by any means. Then I was told to safely eat some of the food in the local economy that we should wash it with a 5% bleach solution (is that safe...and if on the detox I'm thinking that would be a no go). Two questions?Given the mentioned availability of raw foods could I be able to successfully complete the detox (I don't have an issue with eating the same things over and over again) and two what can I do to clean local produce so that its safe for consumption? Apparently part of the issue is that they use human feces to fertilize. Thank you for your time and I look forward to your response

    Yes, it seems you have enough raw food available to you to complete the cleanse.

    In order to clean local produce, rinse thoroughly with apple cider vinegar to "disinfect" it. If apple cider vinegar is unavailable, just use water.

    Q: I'm a male who has HPV. Now when I was around the age of 17 to 18 I notice the warts. My "Doctor" told me it "could" be from heat, or sweating in that area. Well almost a year ago my son was born. But during the pregnancy my girlfriend had the warts. The physician had told her that she in fact had HPV.     Q: I love to drink water, but I like to drink hot water you know boiling water slightly cooled. Is there a benefit, or disadvantage to this compared to drinking room temperature water? Secondly, the water I drink is boiled water. Alkaline water is not a privilege most Kenyans have. If 56% of the population is living below poverty line you do the math. So the water I drink is tap water, that I boil to make it safe for drinking. When I get to work I have Alkaline water as my work place provides me with that provision.     Q: I am on my 3rd day of the fully body cleansing. I am definitely doing this to lose weight. I am a 52 year old, black, Christian, wife, mother to 21 and 14 year old girls, legal secretary who is 450 lbs. I am to the point now where if I don't do this I'm going to be housebound. I can barely move some days that is why I started this because I feel so unhealthy. I have a question about the nuts. I got all gun-ho and ordered $135.00 worth of organic nuts from nuts.com. I got raisins, pumpkin seeds, sunflower seeds, almonds, walnuts, pecans, pistachios and cashews and mixed them all up together (well I purchased 2 lbs of each but I only mixed up 1 lb of each together). Anyway, I was reading about how much calories are in nuts. Should I not pay attention to that because I was consuming a lot of calories in the first place or do I have to watch how many nuts I eat? I have put some nuts in a sandwich bags and basically filled it up and that is supposed to be my nuts ration for the day. I am also eating fruits and vegetables. So far the fruit have been grapes, grapefruit, red apples, pears, green apples and bananas. The vegetables have all been in a salad: tomatoes, celery spinach leaves, carrots, mixed in balsamic vinaigrette. I only ate the salad Monday night all the other times I have just eaten the fruit and nuts. I am also consuming approximately 75-100 oz of water. Sorry I’m long winded I just wanted you to get the entire picture.

    Nuts are best kept to a minimum if you use them at all. Nuts are extremely high in fat and have the opposite omega 3- omega 6 ratio that is optimal for health. Seeds are best as far as ratios are concerned. Also nuts are truly easy to over eat and cause your nutrient ratios to be off.

     

    A healthy vegan diet is a high raw fruitarian diet. 

    Example:

    Breakfast: green smoothie. (500-1000 calories of fruits blended with a handful of greens and water)

    Bridge: Dates and strawberries (500 calories) 

    Lunch: Salad with low sugar fruits (cucumber, tomato, squash, bell peppers) topped with fruit, beans, psuedo grains, 

    Bridge: 2-3 apples

    Dinner: Raw wraps (collard greens) with low sugar fruit and tahini

    Snack: Sorbet

    Q: My husband has scar tissue on his head. He was hit on the head with a bat by some attackers (years ago). The top of his head is extremely hard like a rock --the entire thing is scar tissue. In the back towards his neck but still on his head is a larger patch of raised scar tissue. It is so severe that he has lost and appears to be losing more hair off the top of his head (I think it's because his skin isn't breathing or getting oxygen. He's tried everything from drinking Aloe Vera and applying this to all sorts of products. Currently he is using the skintight products (razor/hair bump, as well as the coco butter) however after reading your article about alcohol, I know they contain this so I don't want him to keep using it even though we are seeing some larger results than we ever have before with that product. We are both vegetarians. He has been a vegetarian for 15 years. He used to eat soy burgers etc., but has completely cut that out for about 3 months. He is now in his third week of raw food (as prescribed by your website) just drinking the green juice from Bolthouse (algae, wheatgrass, spinach etc.) and eating large spinach and vegetable raw salads. We are using the recipe that you included in your e-books. We will continue on a diet like this for the next year while we cleanse our bodies and keep this lifestyle. However, with all of that, my question for you is-- Do you have any recommendations for him to remove his scar tissue? I thought the OZ OIL would help. In addition, I'd like to buy him the FIBRIOD BUSTER and/or any other fibroid kits- but the website says they are for women (only?). Any recommendations you could make would be most appreciated.

    I would tell you to keep using natural products (shea butter, OZ OIL, FIBRIOD BUSTER, MSM SULFUR, etc.) and let the healing take place at its own course. The more you focus on what you don't like (his head injury) the more it will magnify (not heal). His body is programmed to heal and it will but you must remain open to let the body heal at its own pace. Just continue to eat, think, and live right. He'll heal! Just give it time!     Q: Unfortunately, I think it will be impossible to order and get the products you mentioned. I ordered a pack of organic seeds last year from Holland, and experienced many difficulties getting it.     You are very welcome, Beloved! Olive Leaf is a very powerful and effective herb, especially for cases of so-called viruses. Because it's an herb you really can't take too much of it. Personally, 3 is the magic number, so I'd recommend 3 times per day (tea or capsule form).

    Q: My friend who recommended the full body cleanse said I should contact you. I'm getting very bad reactions to the charcoal powder.
