Raw Zucchini Rollatini

Zucchini ribbons substitute for eggplant in this raw rollatini dish. The zucchini is crisp, but light in flavor, allowing for the flavors of the cashew cheese, raw tomato sauce, and fresh herbs to shine. This light, creamy, and flavorful dish is great as an hors d’oeuvre at any party.

RAW ZUCCHINI ROLLATINI [VEGAN]

THIS RECIPE IS :

Dairy Free, Raw Vegan and Vegan

INGREDIENTS

  • 1 large zucchini

FOR THE CASHEW CHEESE:

  • 1 cup of raw cashews
  • 3 cups water
  • 1/8 cup of unsweetened almond milk
  • 1/2 tablespoon chives, chopped
  • 1/2 teaspoon dill, chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

FOR THE TOMATO SAUCE:

  • 1 large, or 2 small tomatoes
  • 2 cloves of garlic
  • 12 basil leaves
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

PREPARATION

TO MAKE THE ROLLATINI:

  1. Thinly slice the zucchini, lengthwise, into long strips using a mandolin.
  2. Alternatively, if you do not have a mandolin, chop off the ends of the zucchini and stand it upright. Starting at the top, cut downward a piece about an 1/8-inch thick. The zucchini will then have a flat surface on which to lay it down against the cutting board. Place your hand on the uncut and still rounded surface of the zucchini and place your knife just off the bottom of the flat surface. Gently slice a thin slice of zucchini by wedging your knife back forth through the length of the zucchini.
  3. Once cut, lay the zucchini strips on a sheet of paper towels while you prepare the cashew cheese and tomato sauce to absorb any excess moisture.
  4. Once the cashew cheese and tomato sauce are prepared, place zucchini strips on a flat surface, like a cutting board. Spread a tablespoon full of cashew cheese onto each zucchini slice. Roll each zucchini slice up from one end to the other. Use a toothpick to hold together.
  5. Once all the zucchini slices are rolled up, arrange on a plate and spoon tomato sauce over the top.

TO MAKE THE CASHEW CHEESE:

  1. Soak cashews in water for at least an hour.
  2. Drain, rinse, and dry cashews.
  3. Place cashews in a blender or food processor and pulse until finely chopped.
  4. Add almond milk to the blender and blend with cashews until smooth and creamy.
  5. Add chives, dill, salt, and pepper to the blender and pulse until thoroughly combined.

FOR THE TOMATO SAUCE:

  1. Cut tomato in half and scoop out seeds and liquid. Then, dice tomato into small cubes and transfer to a small mixing bowl.
  2. Mince garlic cloves and transfer to mixing bowl with tomato.
  3. Stack basil leaves on top of one another and roll up together long ways, just like you rolled the zucchini. Slice the roll into thin strips. Add to bowl with tomato and garlic.
  4. Add balsamic vinegar, olive oil, salt, and pepper to bowl and stir together until well combined.

    In regards to what you ate, YES, they make the cleanse less effective, so you may not want to eat much of cooked foods. Raw foods will optimize the cleanse. If you are having trouble staying full, try more healthy fats, like avocado, coconut cream, or raw nuts and seeds.

    Q: How often should one eat cook food? I'm a vegan, I do not consume any meat, seafood, milk what so ever. I eat water cresses like everyday so as cook food. Like white rice with black bean sauce, spinach, and pasta at time's I'll eat some Chinese fried rice, veggie roll, steamed vegetables, any advice?

    You can eat cooked food as much as you like. However, try to incorporate as many nutrient-dense raw foods, such as fresh fruits and vegetables, raw nuts and seeds, into your diet to make sure you are receiving an adequate amount of nutrients.

    Q: I have other food combinations that I’m kind of confused about on the e book, this is my first time learning to combine food 1. can I add this to my salad a.     You can add these to your salad! They are exceptions because you are eating them in a salad and tomatoes and cucumbers are veggie-fruits, so they are okay! Avocadoes, tomatoes, cucumbers, etc are okay in your salad!

    Q: I am on my 3rd day of the fully body cleansing. I am definitely doing this to lose weight. I am a 52 year old, black, Christian, wife, mother to 21 and 14 year old girls, legal secretary who is 450 lbs. I am to the point now where if I don't do this I'm going to be housebound. I can barely move some days that is why I started this because I feel so unhealthy. I have a question about the nuts. I got all gun-ho and ordered $135.00 worth of organic nuts from nuts.com. I got raisins, pumpkin seeds, sunflower seeds, almonds, walnuts, pecans, pistachios and cashews and mixed them all up together (well I purchased 2 lbs of each but I only mixed up 1 lb of each together). Anyway, I was reading about how much calories are in nuts. Should I not pay attention to that because I was consuming a lot of calories in the first place or do I have to watch how many nuts I eat? I have put some nuts in a sandwich bags and basically filled it up and that is supposed to be my nuts ration for the day. I am also eating fruits and vegetables. So far the fruit have been grapes, grapefruit, red apples, pears, green apples and bananas. The vegetables have all been in a salad: tomatoes, celery spinach leaves, carrots, mixed in balsamic vinaigrette. I only ate the salad Monday night all the other times I have just eaten the fruit and nuts. I am also consuming approximately 75-100 oz of water. Sorry I’m long winded I just wanted you to get the entire picture.

    Nuts are best kept to a minimum if you use them at all. Nuts are extremely high in fat and have the opposite omega 3- omega 6 ratio that is optimal for health. Seeds are best as far as ratios are concerned. Also nuts are truly easy to over eat and cause your nutrient ratios to be off.

     

    A healthy vegan diet is a high raw fruitarian diet. 

    Example:

    Breakfast: green smoothie. (500-1000 calories of fruits blended with a handful of greens and water)

    Bridge: Dates and strawberries (500 calories) 

    Lunch: Salad with low sugar fruits (cucumber, tomato, squash, bell peppers) topped with fruit, beans, psuedo grains, 

    Bridge: 2-3 apples

    Dinner: Raw wraps (collard greens) with low sugar fruit and tahini

    Snack: Sorbet

    Q: I am writing you to see if you have any information and remedies for hemorrhoids. I am a Black African male in my 40's.     Q: Is sea salt and warm water a good natural laxative? If so how often do you recommend the use of sea salt for elimination? I was reading The Master Cleanser by Stanley Burroughs and it gives this recommendation, along with drinking lemon water mixed with organic syrup and cayenne pepper.     Eating hot peppers has its benefits but excess consumption may eventually cause harm. It boils down to how often and how much of them you are eating. Organic doesn't make a thing necessarily good to eat. Organic peanut butter is better than regular or inorganic peanut butter but peanut butter is peanut butter and thus hard on the digestive process.

    Q: Members of my house have started drinking Hemp Milk and Rice Milk. No more Cow Milk! We like the taste of both. I also like the fact that the hemp milk has omega and other nutrients in it. However, my son is three years old and we have discovered he is allergic to nuts because a family member gave him a cashew to eat, then his eyes began to swell up like Garfield the cat.     Q: After I had my baby over a year ago I've had a constant discharge. There is no foul order just thin white.
