Rich Vegan Butternut Squash & Sage Lasagna

Just because it’s vegan doesn’t make it healthy. But most of us know that by now (think Oreos).

That said, sometimes you just need something that isn’t comprised of kale and quinoa. I get it.

This recipe isn’t as “pure” as a lot of my recipes, but if you’re looking for something that straight up satisfies that comfort food craving, this is your recipe (it doesn’t taste vegan at all).

Make it with love and enjoy every bite!

Vegan Butternut Squash and Sage Lasagna with White Sauce

Ingredients for Squash

  • 6 cups butternut squash
  • 2 Tbsp. olive oil
  • 1/4 cup chopped fresh sage
  • 6 garlic cloves, left whole
  • 1 tsp. sea salt
  • 1/2 tsp. black pepper

Directions for Squash

Preheat oven to 400° Fahrenheit.

In a large bowl, mix the butternut squash, garlic cloves, sage, olive oil, salt and pepper.

Place on a baking sheet and bake for 35 minutes (take the baking sheet out of the oven and flip the squash after 20 minutes and then put back in the oven for the remaining 15 minutes).

When squash is done cooking, transfer into the bowl and mash with a fork. The mixture doesn’t have to be 100% mashed, just make sure that the garlic cloves are mashed up.

Set mixture aside.

Ingredients for Vegan Ricotta

  • 2 cups firm tofu
  • 1/4 cup nutritional yeast
  • 1 heaping tsp. garlic powder
  • 1 heaping tsp. dried dill
  • 1 tsp. sea salt
  • 1 Tbsp. apple cider vinegar
  • 1/2 cup rejuvelac 

Directions for Vegan Ricotta

Place all of the vegan ricotta ingredients into a food processor and process until smooth, about 1 minute.

Ingredients for White Sauce

  • 1/4 cup olive oil
  • 1/4 cup yellow onion, finely chopped
  • 4 Tbsp. flour
  • 4 cups plain organic soy milk
  • 1/2 tsp. salt
  • 10 turns fresh black pepper
  • 1/8 tsp. allspice

Directions for White Sauce

Heat olive oil over medium heat. Add the onions and saute for 3 minutes.

Add the flour and stir continuously for 3 minutes. Make sure the flour does not get brown. If it starts to get brown before 3 minutes are up, jump to the next step before the 3 minutes are up.

Add the soy milk and whisk.

Bring to a boil and then turn down the heat and allow to come to a simmer.

Simmer for 10 minutes, stirring frequently, until sauce thickens.

Add salt, pepper and allspice.

Assemble and Cook

Preheat oven to 350° Fahrenheit

Place 1/2 cup of white sauce on the bottom of an 8×8 baking dish.

Layer the rest as follows:

  • Layer of noodles
  • 1/3 of the squash mix
  • 1/3 of the vegan ricotta
  • 1/2 cup of white sauce
  • Layer of noodles
  • 1/3 of the squash mix
  • 1/3 of the vegan ricotta
  • 1/2 cup of white sauce
  • Layer of noodles
  • Remaining squash mix
  • Remaining vegan ricotta
  • Layer of noodles
  • Remaining white sauce

Cover with foil and bake for 40 minutes.

Take off foil and bake for an additional 15 minutes.

Note:

You can easily make the squash and the ricotta a day in advance to save time.

    You can eat cooked food as much as you like. However, try to incorporate as many nutrient-dense raw foods, such as fresh fruits and vegetables, raw nuts and seeds, into your diet to make sure you are receiving an adequate amount of nutrients.

    Q: I wrote to you a couple weeks ago asking if it was normal for me to have an outbreak only a day or two into the full body cleanse kit. You wrote back and told me that an outbreak is the body healing. It is two weeks later and I am still having an outbreak! Is this a good sign? Do you think this outbreak may continue on through my anti viral kit? I have been eating mostly fruits and vegetables, however I felt like I needed more substance and I was not enjoying my food at all... so I bought organic noodles and organic tomato sauce (sea salt only, tomatoes, no sugar, you get the point). Is adding some of this into my diet going to make the kits less effective or possibly not work?

    A:

    The outbreak is a result of your body trying to eliminate the toxicity and impurities from your body. Continue to follow the guidelines of the Cleanse.

    In regards to what you ate, YES, they make the cleanse less effective, so you may not want to eat much of cooked foods. Raw foods will optimize the cleanse. If you are having trouble staying full, try more healthy fats, like avocado, coconut cream, or raw nuts and seeds.

    Q: I've been a vegan for 2 years now. I've done the FBD 3 times in these two years, but my urine is still yellow. The only time it is clear is immediately after I drink water (reverse osmosis water). If I miss a day of drinking water, my urine goes back to being dark yellow. Does this mean that my body is still very toxic? Also, is it normal to release urine 5 to 15 minutes after drinking liquids? I would think that water would need to stay in the body for awhile for proper hydration and cleansing.

    A:

    From what you wrote I would suggest you start drinking alkaline water (purchase an alkaline water machine, you can find various brands in our e-book "Alternative Diet and Lifestyle Manual"). If you are urinating within 10-15 minutes of drinking water you are not absorbing the water, and thus you require micro-clustered water which an alkaline (and ionizing) water machine does. I also highly recommend consumption of our Kidneys-Bladder formula (3 capsules per day).

    Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence. Also, I noticed a white pimple on the tip of my tongue, and this was a confirmation that there was maybe too much stimulating energy in the heart (according to oriental diagnosis of the tongue). When I eat sun baked bread, I automatically feel heat in the body. So I'm wondering if this is a good food to continue with or not. Isn't it more "neutral" (in terms of energy) to include a small portion of cooked brown rice along with the raw regimen?     Q: My son eats, and 30 minutes or sooner he has to go to the bathroom. He is thin, and doesn't hold food. If he eats he goes. What can he take to try to hold his food a little longer so that we can gain a few pounds. Is this behavior healthy? The doctors say he is fine, but going to the bathroom everytime you eat something, is a bit much.

    You're supposed to defecate 30 minutes after you eat. That's natural! You are going against nature to have the son to be like everybody else who are constipated, and don't know it. Don't follow societal norm!

    Q: What's the best way to start on a vegan/raw food diet? I am not sure what to eat to make sure I would get a nutritious diet-you may not be able to go into that much detail but how can I get sample meal plans for breakfast, lunch and dinner incorporating this type of diet-perhaps there is somewhere on the web I find something like this?     If I do say myself, the best way to start a raw food diet is to be coached by me.     Here are some other tips to get started.

    1: Join a raw food meetup group or community. Surround yourself with supportive people who can point you in the right direction. Try meetup.org or 30bananasaday.com

    3: Start simple with breakfast. Always start your day with a green smoothie. read "Green smoothie revolution" by forget authors name at the moment. heh.

    A sample meal plan would be.

    Breakfast: Green smoothie

    Bridge: raw bar, handful of nuts or seeds, or fruit

    Lunch: Raw wraps made from collard greens. use a base of tahini, hummus, or nut butter. Fill with sprouts and colorful veggies

    Bridge: raw bar, handful nuts or seeds, or fruit

    Dinner: Raw pasta with a large salad

    Snack: Sorbet

    Q: I am suffering from severe yeast infections since past several months, have taken acidophilus, grapeseed extract, garlic, etc. The condition has become very itchy, burning sensation while urinate, massive white clotty discharge. Also suffer from an ovarian cyst and bartholins cyst on outside of vagina. Just confirmed my pregnancy yesterday. Please advise me on what I should do.     Q: I'm a raw vegan, and still suffering from acne. I stay away from all sweeteners, except fresh whole fruits. I started to have lots of greens juices these days, and my skin has improved a little bit. What about spices such a cayenne pepper, is it bad for your skin? What about goji berries? I know they are diet fruits, thats why I stay away from them for a while. I even fast for a while. I just don't know how my skin can getter better.

    Q: I have been taking 35% hydrogen peroxide baths also with Sea Salt and the antiviral drops but I am not sure if I am still oxygenating my body enough?     Q: Hello, I am worried about my tongue because it has never been totally pink in years and it always seems to have a white cover over it. I use a tongue scraper, not consistently. I have been vegetarian for years but I recently began eating more of raw vegan diet (11 months). I'm assuming it is mucus or bacteria? Can you help?

    Q: I was wondering if it is okay to mix Mrs. Dash season blend with Olive Oil as a dressing for my salad?     Q: I am writing you to see if you have any information and remedies for hemorrhoids. I am a Black African male in my 40's. I have changed my diet for the last 3 yrs., no meat, fish, cheese, milk, no dairy, no alcohol, no bread, greatly decreased sugar and salt.     Eating hot peppers has its benefits but excess consumption may eventually cause harm. It boils down to how often and how much of them you are eating. Organic doesn't make a thing necessarily good to eat. Organic peanut butter is better than regular or inorganic peanut butter but peanut butter is peanut butter and thus hard on the digestive process.

    Q: I have a question for you. I love reading your articles and I was reading about the importance of iodine in a vegan diet. I am vegan and I'm scared I'm getting iodine and you wrote that seaweed would fulfill that need. Did you mean Sushi seaweed, the roasted nori kind? Or fresh seaweed? I haven't been able to find fresh seaweed anywhere, except for already prepared seaweed salad. Also, how would you suggest I use the roasted nori seaweed? In smoothies? Because by itself it does not taste good.

    No! Not fresh water seaweed. But seaweed sold in a health food store. One in a bottle. Try Dulse, Kelp, Spiriulina, or even Dherbs Iodine Phosphate formula.

    Q: I have read that Peppermint, Lavender, Rosemary and Sage essential oils are all good for hair and stimulating hair growth. Would it be more beneficial to use them all at once for maximum result or should I just use the Rosemary and Sage only as you suggested? Also, I didn?t see any Almond oil so I was wondering if I could use Olive oil or Jojoba oil as a carrier oil.

    Yes they are great for stimulating hair growth; however, I would use them together or combined. ANY natural edible oil can be used - it's YOUR choice. Jojoba and/or sesame seed oil are the best oils for the hair.
