Shiitake Tempeh and Kale Stir-Fry

This is delicious stir-fry of marinated tempeh, rich shiitake mushrooms and sautéed kale in a garlic-ginger sauce, over red rice. I know you’ll love it.

SHIITAKE TEMPEH AND KALE STIR-FRY [VEGAN, GLUTEN-FREE]

INGREDIENTS

  • desired amount of cooked rice or quinoa (I like red rice)
  • 1 oz. dried shiitake mushrooms, reconstituted and sliced
  • 8 oz. tempeh, sliced very thinly

Marinade:

  • 1/3 cup liquid aminos or soy sauce
  • 2 Tbsp. corn starch
  • 3 Tbsp. rice wine vinegar
  • 1 Tbsp. agave nectar
  • 1 Tbsp. fresh ginger, minced
  • garlic clove, minced
  • ½ cup water from reconstituting shiitake mushrooms

Conclusion:

  • 1 Tbsp. sesame oil
  • 2 garlic cloves, minced
  • dash of crushed red pepper flakes
  • 1 small bunch of kale, chopped and stem tips discarded
  • 3 green onions, sliced thinly on the diagonal

PREPARATION

  1. Start by reconstituting the mushrooms in a shallow bowl with just enough boiling water to cover. Allow to rest until ready to use, at least 10 minutes.
  2. Cook desired amount of rice or quinoa according to package. Slice the tempeh very thinly.
  3. In a small bowl, whisk together the marinade ingredients, excluding the water from the mushrooms. When the mushrooms have rested for 10 minutes, remove ½ cup of the water and whisk into the marinade.
  4. Seal the tempeh and marinade in a small zip lock baggie. Shake to ensure all the pieces are covered and refrigerate until ready to use, at least 10 minutes.
  5. Remove the reconstituted mushrooms with a slotted spoon from the water and slice. Set aside.
  6. Once the tempeh is done marinating, heat the sesame oil over medium-low and add the garlic and crushed red pepper. Then, remove the tempeh from marinade with a slotted spoon and add to pan (reserving the marinade for later). Sauté for about 5 minutes, then add the mushrooms, kale, and marinade. Sauté another 5 minutes until the sauce has thickened. If it thickens too much, add a bit of water from the mushrooms. Stir in the green onions and remove from heat.
  7. Serve hot, over cooked rice or quinoa and garnish with sesame seeds and extra green onion.

    Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence. Also, I noticed a white pimple on the tip of my tongue, and this was a confirmation that there was maybe too much stimulating energy in the heart (according to oriental diagnosis of the tongue). When I eat sun baked bread, I automatically feel heat in the body. So I'm wondering if this is a good food to continue with or not. Isn't it more "neutral" (in terms of energy) to include a small portion of cooked brown rice along with the raw regimen?     Q: I love to drink water, but I like to drink hot water you know boiling water slightly cooled. Is there a benefit, or disadvantage to this compared to drinking room temperature water? Secondly, the water I drink is boiled water. Alkaline water is not a privilege most Kenyans have. If 56% of the population is living below poverty line you do the math. So the water I drink is tap water, that I boil to make it safe for drinking. When I get to work I have Alkaline water as my work place provides me with that provision.     Q: I've been a vegan for 2 years now. I've done the FBD 3 times in these two years, but my urine is still yellow. The only time it is clear is immediately after I drink water (reverse osmosis water). If I miss a day of drinking water, my urine goes back to being dark yellow. Does this mean that my body is still very toxic? Also, is it normal to release urine 5 to 15 minutes after drinking liquids? I would think that water would need to stay in the body for awhile for proper hydration and cleansing.

    From what you wrote I would suggest you start drinking alkaline water (purchase an alkaline water machine, you can find various brands in our e-book "Alternative Diet and Lifestyle Manual"). If you are urinating within 10-15 minutes of drinking water you are not absorbing the water, and thus you require micro-clustered water which an alkaline (and ionizing) water machine does.     Q: Today makes day 9 of my FULL BODY DETOX (FBD). This morning I have an outbreak on my hand. I have been practicing telling myself I am Healing, but my job is stressful and yesterday I had a stressful day and this morning the outbreak on my right hand.
