These Quinoa Stuffed Peppers Will Steal The Show!

When cooking with bell peppers, I chop them or slice them and make them a small part of my dish. But I often forget that peppers can also be prepared as the main attraction of the meal. When cooked whole, you can really taste the natural sweetness and enjoy the delicate form of the vegetable. And with the variety of colors available — red, yellow, orange, green and purple — you can easily make a colorful dish that is not only healthy, but very appealing to the eyes. Here’s a simple way to do it:

Ingredients

  • 6 medium sized bell peppers (any one color or a mix of colors is fine)
  • 1 cup cooked quinoa (use veggie or chicken broth instead of water for added flavor)
  • 1-2 scallions chopped
  • 2 cloves garlic finely chopped
  • 1 stalk of celery medium chopped
  • ¼ cup frozen peas, rinsed and drained
  • ¼ cup pine nuts
  • 1/2 tsp. fennel seeds
  • ½ tsp. cumin seeds
  • 1 Tbsp. lemon juice
  • Olive oil
  • Sea salt and freshly ground black pepper to taste

Directions

In a pan, heat some olive oil to medium heat.

Add the fennel and cumin seeds and cook until they change color slightly.

Sauté the garlic until translucent.

Add the celery and cook for 2-3 minutes until soft.

Next, add the scallions and cook for another 2 minutes.

Now add the peas and continue to cook for a minute.

Toss the pine nuts to this mix and cook for another minute.

Season with salt and pepper. Turn heat off and let cool.

Add the cooked quinoa to the veggies.

Add juice of lemon and mix everything well.

Cut the bell peppers right through the middle starting from the non-stem side toward the stem side until you reach the seeds. Stop at this point and do not cut further so as to keep the bell pepper intact.

Take the quinoa mix and slightly separate the cut bell pepper to carefully stuff the quinoa in the bell pepper. Once stuffed, gently close the two halves back together with your fingers. Continue to stuff the rest of the bell peppers the same way.

In the same pan you used to sauté the vegetables, add some more olive oil and bring to medium heat.

Gently place the bell peppers in the pan and let cook from the bottom. Once cooked on this side, carefully flip them one at a time to cook on the top side. Repeat turning and cooking the pepper until cooked all around.

Alternatively, you can also bake the stuffed peppers in the oven. Place them on a baking tray or dish. Sprinkle them with olive oil and place them in a preheated oven. Bake them at 385 degrees Fahrenheit for 15 minutes. Gently flip over and let them cook for another 7-8 minutes, or until you see them start to brown. Remove from oven once cooked all around.

That’s it, the stuffed peppers are ready to devour!

    You can eat cooked food as much as you like. However, try to incorporate as many nutrient-dense raw foods, such as fresh fruits and vegetables, raw nuts and seeds, into your diet to make sure you are receiving an adequate amount of nutrients.

    Q: I am interested in all the lessons you have tabled in the article section of Dherbs. On reading one article, I learned that pepper is a mucus irritant. I am concern because I have about read on some other blog about a doctor that cure cancer using pepper and garlic (credits to KELLY EIDEM). So, I have been eating raw hot pepper and garlic.     Eating hot peppers has its benefits but excess consumption may eventually cause harm. It boils down to how often and how much of them you are eating. Organic doesn't make a thing necessarily good to eat. Organic peanut butter is better than regular or inorganic peanut butter but peanut butter is peanut butter and thus hard on the digestive process.

    Q: Thank you for always answering my questions. I have about two more. Okay, I'm currently living overseas where I'm limited on raw fresh foods (vegetables and fruits). I want to do the detox but I'm concerned that I won't have everything as far as raw food to be successful. I have access to basics (apples, oranges, bananas, tomatoes, avocados, melons, lettuce, cabbage, bean spouts, carrots, celery, peppers, green beans, peas, bagged nuts,) but nothing exotic by any means. Then I was told to safely eat some of the food in the local economy that we should wash it with a 5% bleach solution (is that safe...and if on the detox I'm thinking that would be a no go). Two questions?Given the mentioned availability of raw foods could I be able to successfully complete the detox (I don't have an issue with eating the same things over and over again) and two what can I do to clean local produce so that its safe for consumption? Apparently part of the issue is that they use human feces to fertilize. Thank you for your time and I look forward to your response

    Yes, it seems you have enough raw food available to you to complete the cleanse.

    In order to clean local produce, rinse thoroughly with apple cider vinegar to "disinfect" it. If apple cider vinegar is unavailable, just use water.

    Q: I was wondering if it is okay to mix Mrs. Dash season blend with Olive Oil as a dressing for my salad? It tastes real bad with just Olive Oil alone, and I don't like the bitterness taste of lemon juice, and apple vinegar cider.     Q: It's been 2 weeks now since, I started eating exclusively raw. I'm even baking whole wheat bread in the sun. This was a great substitute for the cooked rice I used to eat. I'm also eating quite a large amount of grapes (red and white), as my body seems to ask for it. But recently, I noticed that my heart is beating quite strongly, and I find difficulty to bear the hot weather as a consequence. Also, I noticed a white pimple on the tip of my tongue, and this was a confirmation that there was maybe too much stimulating energy in the heart (according to oriental diagnosis of the tongue).     Q: Is sea salt and warm water a good natural laxative? If so how often do you recommend the use of sea salt for elimination? I was reading The Master Cleanser by Stanley Burroughs and it gives this recommendation, along with drinking lemon water mixed with organic syrup and cayenne pepper. Is it safe to give myself an enema 2xs per day using a hot water bottle filled with fresh squeezed organic lemon and distilled water?     Yes, sea salt in water is a mild laxative!

    You can do it as often as you FEEL the need to drink or take it.

    Q: I am on my 3rd day of the fully body cleansing. I am definitely doing this to lose weight. I am a 52 year old, black, Christian, wife, mother to 21 and 14 year old girls, legal secretary who is 450 lbs. I am to the point now where if I don't do this I'm going to be housebound. I can barely move some days that is why I started this because I feel so unhealthy. I have a question about the nuts. I got all gun-ho and ordered $135.00 worth of organic nuts from nuts.com. I got raisins, pumpkin seeds, sunflower seeds, almonds, walnuts, pecans, pistachios and cashews and mixed them all up together (well I purchased 2 lbs of each but I only mixed up 1 lb of each together). Anyway, I was reading about how much calories are in nuts. Should I not pay attention to that because I was consuming a lot of calories in the first place or do I have to watch how many nuts I eat? I have put some nuts in a sandwich bags and basically filled it up and that is supposed to be my nuts ration for the day. I am also eating fruits and vegetables. So far the fruit have been grapes, grapefruit, red apples, pears, green apples and bananas. The vegetables have all been in a salad: tomatoes, celery spinach leaves, carrots, mixed in balsamic vinaigrette. I only ate the salad Monday night all the other times I have just eaten the fruit and nuts. I am also consuming approximately 75-100 oz of water. Sorry I’m long winded I just wanted you to get the entire picture.

    Nuts are best kept to a minimum if you use them at all. Nuts are extremely high in fat and have the opposite omega 3- omega 6 ratio that is optimal for health. Seeds are best as far as ratios are concerned. Also nuts are truly easy to over eat and cause your nutrient ratios to be off.

     

    A healthy vegan diet is a high raw fruitarian diet. 

    Example:

    Breakfast: green smoothie. (500-1000 calories of fruits blended with a handful of greens and water)

    Bridge: Dates and strawberries (500 calories) 

    Lunch: Salad with low sugar fruits (cucumber, tomato, squash, bell peppers) topped with fruit, beans, psuedo grains, 

    Bridge: 2-3 apples

    Dinner: Raw wraps (collard greens) with low sugar fruit and tahini

    Snack: Sorbet

    Q: Why do I get a horrible stomach ache, that lasts a couple hours after I eat a strong pepper such as a habanero pepper? Is the pepper showing me that I have an existing condition such as an ulcer? Is the pepper damaging my stomach? What is going on?

    Q: I started the full body detox today, and found that I DO NOT like the salad dressing I made with the olive oil, apple cider vinegar and lemon juice. I found I could not tolerate it on my salad. What can I do instead? Another question is... I noticed lentils on the food combining chart. Those have to be cooked.     Back problems also have an emotional cause. Are you bending over backwards for somebody or something? Do you feel that your back is against the wall in some regard or matter?     Q: My question is I use to have a very caramel complexion or fair complexion when I was in West Africa. Ghana. But when I move USA out here over the course of the years my complexion has change drastically from fair to totally dark. Do you know why this happen? And what can I do to retain my color back.     Change of climate, Beloved. You went from a healthy environment to an unhealthy one. You are having eye problems because there is something you need to see that you have been unable or unwilling to see so far. It could be on the emotional level, logical level, etc. but it pertains to some area of your life. The whites of your eyes are yellowish because your liver is toxic.     Q: Dherbs.com, I wanted to update you on my experience with the WEIGHT RELEASE CLEANSE AND REGIMEN; I am on the third week of the program (almost finished) and I have lost 25 pounds thus far and still releasing weight. Although, I know the program calls for all raw foods; I have had a few days where I did not follow the plan (i.e. I had some cooked vegetable dishes and some Quinoa).     Q: Can I lightly sauté in Olive oil or steam my raw vegetables occasionally on the Full Body Cleanse? This is my second day on the cleanse and I am having a hard time eating crunchy vegetables.

    Hi, and thanks for the question.

    It is best to avoid oil for the cleanse and future dieting. Oil slows down digestion, reduces blood flow up to 30 percent for 3 hours after digestion, and is essentially a ton of calories with little to no nutrient value. When you sauté vegetables in olive or other oil you are turning a low calories highly nutritious food into a high calorie and low nutrient dense food.

    Steaming is an ok option if done lightly. When you steam vegetables you do reduce nutrient value and destroy some enzymes. If you do you will lessen the impact of the cleanse to a degree but I would rather you eat the vegetable than not at all. The benefit of eating the vegetable lightly steamed is better than avoiding the vegetable.
