Vegan Cheesecake with Strawberry Basil Sauce


Strawberry and basil are two ingredients that I had only ever experienced together in a cocktail but the two pair quite nicely in cake. The tart sweetness of the strawberry balances the spicy, clove like flavor of the basil and is an absolute delight in this raw, vegan cheesecake. Adding herbs to desserts is a great way to enhance the flavor without adding sugar or fat making them more healthy and well rounded.

This recipe, in addition to being flavorful and healthy is really vibrant in color, making it a beautiful addition to the dessert table at the next gathering with your friends. After all, we do eat with our eyes first! Enjoy!

Decadent Vegan Cheesecake With Strawberry-Basil Sauce

Yield: one 9-inch cake, three 4-inch cakes, or 12-14 cupcakes

Ingredients for crust

  • 1/2 cup raw almonds, soaked at least 4 hours
  • 1 cup macadamia nuts, soaked at least 4 hours
  • ¾ cup Medjool dates, pitted
  • pinch of pink salt
  • ¼ cup dried, unsweetened coconut

Ingredients for cheesecake

  • 3 cups cashews, soaked at least 4 hours
  • ½ cup Medjool dates
  • 2 whole lemons, peeled, seeded and sectioned
  • Zest of 1 lemon
  • ¼ cup maple syrup
  • ½ cup coconut oil
  • 1 Tbsp. vanilla

Ingredients for strawberry-basil sauce

  • 1 cup fresh strawberries
  • 1 lemon, seeded and sectioned
  • ¼ cup packed fresh basil leaves
  • ½ cup maple syrup


Place the strawberries and lemon for the sauce in the freezer.

To make the crust: place the almonds in the processor and blend until a fine meal forms. Add the remaining ingredients and process until a sticky dough forms. Press into the bottom of a spring form pan(s) that is sprinkled with shredded unsweetened coconut. Place in fridge.

To make the cheese cake put everything in the food processor and blend until thick and creamy. Taste it, adjust if necessary. Press into the bottom of your spring form pan(s) and put in the freezer

Take the fruit out of the freezer and put everything in the food processor for the strawberry basil sauce. Blend until well combined and then pour over your cheesecake. Place back in the freezer overnight or at least 3 hours.

Decorate the cake to your liking. I used sliced strawberries and basil leaves.

Thaw before serving and store in an airtight container in the fridge.

Chefs tip: You can make these as cupcakes, mini cakes or one large cake. If making cupcakes, follow the directions but repeat the steps for each cupcake. I find that using silicon cups is easiest and they are reusable for there is less waste involved.

    Q: I started taking Holy Basil two weeks ago for about 4 days and then all of sudden my supreclavical glands, and the back of my neck have been swollen. I have had blood work done and a CT scan and they can't find anything. I was put on Prednisone and a Z-Pac antibiotic but the swelling is still there.     Q: I see also that you recommend a complete diet with these programs. I am guessing its a vegan diet right? I wanted to ask something on that is coconut milk and coconut oils ok for that? I personally had a very hard time trying to eat that many vegetables and many ph balance vegans seem to think fruits aren?t good either. I eat that many vegetables one it tears me up the next day and two I just cant consume enough calories that way. I can try and make up for it by eating things like almonds but I eat to many almonds I get the same problem the next day. Now coconut milk (unsweetened) and a digestive enzyme works for me for picking up extra calories.... but I hear very conflicting information about coconut and its saturated fat content. Is it ok to use daily as a part of the diet for cleansing? And your oxy-drops are those the same as the drop for ph balancing water?? Or is it something different? I am wanting to start lifting weights as I need to put on some muscle and I?m wondering if its something that would be beneficial in combating muscle soreness by increased oxygen in the body.

    Q: I am very much aware of herbs ayurvedic and regular from a child. What makes your product lets say for the lymph and blood work better than another brand. Lets say it has the same key ingredients that is specifically for lymph and blood. Why would you need 25 herbs in a blend opposed to just the main 3 for the specific organ or purpose. I am so tired of trying everything, and want to be on a trusted regimen. I already prepared oppose to me buying each herb single and mixing it myself.     Q: How often should one eat cook food? I'm a vegan, I do not consume any meat, seafood, milk what so ever. I eat water cresses like everyday so as cook food. Like white rice with black bean sauce, spinach, and pasta at time's I'll eat some Chinese fried rice, veggie roll, steamed vegetables, any advice?


    You can eat cooked food as much as you like. However, try to incorporate as many nutrient-dense raw foods, such as fresh fruits and vegetables, raw nuts and seeds, into your diet to make sure you are receiving an adequate amount of nutrients.

    Q: I wrote to you a couple weeks ago asking if it was normal for me to have an outbreak only a day or two into the full body cleanse kit. You wrote back and told me that an outbreak is the body healing. It is two weeks later and I am still having an outbreak! Is this a good sign? Do you think this outbreak may continue on through my anti viral kit? I have been eating mostly fruits and vegetables, however I felt like I needed more substance and I was not enjoying my food at all... so I bought organic noodles and organic tomato sauce (sea salt only, tomatoes, no sugar, you get the point).     The outbreak is a result of your body trying to eliminate the toxicity and impurities from your body. Continue to follow the guidelines of the Cleanse.

    In regards to what you ate, YES, they make the cleanse less effective, so you may not want to eat much of cooked foods. Raw foods will optimize the cleanse. If you are having trouble staying full, try more healthy fats, like avocado, coconut cream, or raw nuts and seeds.

    Q: I have another question, do you have anything without Senna? Senna causes me to have anxiety. I am suffering with this pressure in the middle of my chest that comes from stress. Have you heard of Holy Basil? Please let me know I have used it before when my life became stressful. Do you have any ideas?

    Q: I was wondering if it is okay to mix Mrs. Dash season blend with Olive Oil as a dressing for my salad?     Q: I have used a product similar to your Bowel Mover which has both senna leaf and cascara sagrada as ingredients. Recently I had a colonoscopy and the gastroenterologist found staining from these ingredients. He also told me that if I continued to use them that they would have a reverse effect, making my minimal peristaltic action stop completely. What is your thoughts on my continued use of these products? Are there any herbs that would strengthen my peristaltic action, making it work on its own?

    Q: Hello, I'm on day 3 of the FBC and I'm having a really hard time with sweets.     Q: Is sea salt and warm water a good natural laxative? If so how often do you recommend the use of sea salt for elimination? I was reading The Master Cleanser by Stanley Burroughs and it gives this recommendation, along with drinking lemon water mixed with organic syrup and cayenne pepper. Is it safe to give myself an enema 2xs per day using a hot water bottle filled with fresh squeezed organic lemon and distilled water? Asking this because Bzod had me to listen to 88.3 today here in Cincinnati and the guy (Mike) was telling how he does this regularly and has great results.


    Yes, sea salt in water is a mild laxative!

    You can do it as often as you FEEL the need to drink or take it.

    Q: I had a question regarding the chicken pox and other child sickness. I wanted to know what must I give my 8 month old baby if he do get the chicken pox or other sickness. I haven?t given him any vaccination, so he is clean of all that pollution that they are given the children. Could you please advice what I must do if he gets that.     Q: What's the best way to start on a vegan/raw food diet? I am not sure what to eat to make sure I would get a nutritious diet-you may not be able to go into that much detail but how can I get sample meal plans for breakfast, lunch and dinner incorporating this type of diet-perhaps there is somewhere on the web I find something like this?     If I do say myself, the best way to start a raw food diet is to be coached by me. I run a 6 month health coaching program that is 60-90 percent raw and 100 percent vegan/gluten free/ allergy free.     Here are some other tips to get started.

    1: Join a raw food meetup group or community. Surround yourself with supportive people who can point you in the right direction. Try or

    3: Start simple with breakfast. Always start your day with a green smoothie. read "Green smoothie revolution" by forget authors name at the moment. heh.

    Lunch: Raw wraps made from collard greens. use a base of tahini, hummus, or nut butter. Fill with sprouts and colorful veggies

    Dinner: Raw pasta with a large salad

    Snack: Sorbet

    Q: I started my full body detox program yesterday and this morning I stopped into Jamba Juice to get a wheatgrass shot. I also got a pomegranate juice, strawberry, peach and mango drink with a mega green tea boost...I drank maybe about 4 oz of the drink and trashed it. I had the worst headache I've ever experienced in my life! Was it from the sugar in the juice? They claim to be all-natural or was it from the fasting? Would you recommend this establishment for those seeking to get their body clean?

    Q: I'm sorry to bother you with these problems, but I?m trying to avoid the doctor as much as possible. Although I had seen (two of them) in the past, but neither were able to find the problem. Approximately an inch and a half above my naval (belly button), there?s a small knot. It's not always sore when I slightly press it...sometimes it is. I even had a couple of ultra sounds performed. Nothing was found. Both doctors (including myself) initially thought it was a hernia. But it ended up not being the case. But it seems like every other week it flares up so bad, it have me bending over (for a short period) only to ease the pain in my stomach. The knot would also slightly protrude. This would continue a few hours. Is there anything you would suggest...besides surgery of course? I?m sure there?s an herb or two that can be taken to rectify this problem. I?m just not able to find it. Now about my brother... He's losing weight without an explanation. He?s been to a few doctors but neither were able to find the problem. He even had an AIDS test...which had come back negative. He sometimes sweat from his face for no apparent reason. When he coughs, it?s sometimes long and aggressive.

    Q: I am on my 3rd day of the fully body cleansing. I am definitely doing this to lose weight. I am a 52 year old, black, Christian, wife, mother to 21 and 14 year old girls, legal secretary who is 450 lbs. I am to the point now where if I don't do this I'm going to be housebound. I can barely move some days that is why I started this because I feel so unhealthy. I have a question about the nuts. I got all gun-ho and ordered $135.00 worth of organic nuts from I got raisins, pumpkin seeds, sunflower seeds, almonds, walnuts, pecans, pistachios and cashews and mixed them all up together (well I purchased 2 lbs of each but I only mixed up 1 lb of each together). Anyway, I was reading about how much calories are in nuts. Should I not pay attention to that because I was consuming a lot of calories in the first place or do I have to watch how many nuts I eat? I have put some nuts in a sandwich bags and basically filled it up and that is supposed to be my nuts ration for the day. I am also eating fruits and vegetables. So far the fruit have been grapes, grapefruit, red apples, pears, green apples and bananas. The vegetables have all been in a salad: tomatoes, celery spinach leaves, carrots, mixed in balsamic vinaigrette. I only ate the salad Monday night all the other times I have just eaten the fruit and nuts. I am also consuming approximately 75-100 oz of water. Sorry I’m long winded I just wanted you to get the entire picture.

    Nuts are best kept to a minimum if you use them at all. Nuts are extremely high in fat and have the opposite omega 3- omega 6 ratio that is optimal for health. Seeds are best as far as ratios are concerned. Also nuts are truly easy to over eat and cause your nutrient ratios to be off.


    A healthy vegan diet is a high raw fruitarian diet. 


    Breakfast: green smoothie. (500-1000 calories of fruits blended with a handful of greens and water)

    Bridge: Dates and strawberries (500 calories) 

    Lunch: Salad with low sugar fruits (cucumber, tomato, squash, bell peppers) topped with fruit, beans, psuedo grains, 

    Bridge: 2-3 apples

    Dinner: Raw wraps (collard greens) with low sugar fruit and tahini

    Snack: Sorbet

    Q: Can you recommend the best form of liquid to use when making a tincture. I understand that alcohol is horrible for the human body but, is an exception when making a tincture? Should something else be used to pull out the alcohol soluble constituents out of the herbs? And if so, what is it?

    Q: I am doing the the Full Body Detox, the Anti Viral Cleanse, and then the 10 Day Electric Greens Cell Food Cleanse. I am trying to fully heal form so called HIV. I started seeing brown spots on my palm, and bottom of my feet. I am trying not to freak out. I am drinking distilled, and alkaline water. Also eating salads, smoothies(not diary), and fresh fruits. I plan on going to find a sauna and get my Charka balance. What else can I do to make these spots go away?
