Ingredients

  • 1/2 tsp. blackstrap molasses
  • 1 tsp. ground cashews
  • 1 tbsp. buckwheat flour
  • 1/8 tsp. baking powder
  • pinch baking soda
  • 1/2 tsp. flax meal
  • 2 tbsp. brown sugar
  • 1/8 tsp. ginger powder
  • 1/8 tsp. ginnamon powder
  • pinch ground cloves
  • 2 tsp. coconut milk
  • 1 tsp. coconut oil, melted
  • 1 drops of lemon juice

Instructions

  1. Preheat your oven to 375º F.
  2. Pour the molasses into the bottom of an oven-safe glass jar and spread it around.
  3. In a mixing bowl, whisk all of the ingredients, except the coconut milk and coconut oil, until everything is well combined.
  4. Add the coconut milk and coconut oil to the boil, in addition to the optional drops of lemon juice, and mix well. Dump this mixture into the jar.
  5. Mix well in the jar to incorporate the molasses, or else the molasses will harden at the bottom during the baking process.
  6. Place the jar in the oven and bake for about 18-20 minutes. Remove when ready, allow it to cool slightly, and enjoy your dessert for one!
