Ingredients

For the Lettuce Cups

  • 6 butter lettuce leaves
  • 2 c purple cabbage, shredded
  • 2 green onions, sliced
  • 1 cucumber, thinly sliced
  • 1 c shredded carrots
  • 1 c red bell pepper, thinly sliced

For the Dipping Sauce

  • 2 tbsp. raw almond butter
  • 2 tbsp. coconut aminos
  • 2 tbsp. freshly squeezed lemon juice
  • 1 tbsp. grade A maple syrup
  • 1 tbsp. filtered water

Instructions

For the Lettuce Cups

  1. Rinse the lettuce leaves and set them aside while you prep the other ingredients.
  2. Combine the cabbage, green onion, cucumber, shredded carrots, and bell pepper in a large bowl and mix to combine.
  3. Spoon a decent amount of the vegetable mixture into each lettuce leaf and then prepare the dressing.

For the Dipping Sauce

  1. In a small bowl, whisk all of the ingredients together until you get a smooth consistency.
