- 1 medium avocado, peeled, pitted and cubed
- 1/2 c cucumber, cubed
- 1 c jicama, peeled and cubed
- 1 tbsp. cilantro, finely chopped
- 1 tbsp. freshly squeezed lime juice
- 1 tbsp. olive oil
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- Add all of the ingredients to a large mixing bowl and toss gently to combine.
- Taste and adjust seasonings or lime juice as needed.
