Avocado Jicama Cucumber Salad

Ingredients

  • 1 medium avocado, peeled, pitted and cubed
  • 1/2 c cucumber, cubed
  • 1 c jicama, peeled and cubed
  • 1 tbsp. cilantro, finely chopped
  • 1 tbsp. freshly squeezed lime juice
  • 1 tbsp. olive oil
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper

Instructions

  1. Add all of the ingredients to a large mixing bowl and toss gently to combine.
  2. Taste and adjust seasonings or lime juice as needed.
  3. Serve and enjoy.
