Baked Spaghetti Squash That Is Vegan And Keto

  19 rater(s)

It’s no secret that everyone loves pasta, but the processing, excess carbs, and lack of nutrients makes it an unhealthy option. Spaghetti squash is a great alternative because it can turn into noodles. It is rich in potassium, vitamins A & C, and it is keto approved!

  • Prep Time: 5m
  • Cook Time: 40m
  • Total Time: 45m

  • 1 spaghetti squash
  • 1 tbsp. olive oil
  • 1 tsp. Himalayan salt
  • 1 tsp. pepper

  1. Preheat your oven to 400 degrees F and line a baking sheet with parchment paper. You can also use a silicone mat if you have one.
  2. Cut the spaghetti squash lengthwise and remove the seeds.
  3. Drizzle olive oil on the flesh sides of the squash halves and season with salt and pepper. Place the halves on the pan, flesh side up, and bake for 40 minutes.
  4. Remove the squash from the oven and allow it to cool for a few minutes. Scrape with a fork to turn it into "spaghetti."
