For the Cilantro Pesto

  • 1 bunch cilantro, ends removed
  • 1/3 c raw pumpkin seeds
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeds removed
  • 3 tbsp. extra virgin olive oil
  • juice of 1 lemon
  • 1/2 tsp. sea salt

For the Carrot Noodles

  • 4 large carrots, spiralized
  • raw pumpkin seeds (optional garnish)
  • sea salt & cracked pepper, to taste


For the Cilantro Pesto

  1. Add all of the ingredients to a food processor and blend until smooth.
  2. You may need to stop blending, scrape down the sides of the processor, and continue blending to fully incorporate the ingredients.
  3. Taste the pesto and adjust seasonings as needed. Set aside while you prepare the carrot noodles.

For the Carrot Noodles

  1. Spiralize the carrots into noodles, or use a flat peeler to make thin carrot ribbons if you prefer that type of noodle.
  2. Add the carrot noodles to a large bowl and spoon your desired amount of pesto over the noodles. Toss to combine.
  3. Serve in separate bowls and garnish with optional pumpkin seeds and season with sea salt and pepper. Enjoy!
