Chia Pudding With Mango

  • 3/4 c homemade almond milk
  • 1/4 c water
  • 1/2 tsp. alcohol-free vanilla extract
  • 2 tsp. grade A maple syrup
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger powder
  • pinch of sea salt
  • 1/4 c chia seeds
  • 1/2 c mango, cubed
  • desiccated coconut (optional)


  1. In a medium-sized mixing bowl, combine everything except the chia seeds, mango, and optional desiccated coconut.
  2. While whisking, pour in the chia seeds and continue whisking to avoid clumping. Add in the mango and optional desiccated coconut and continue to mix.
  3. Divide the mixture between two jars and place in the fridge overnight so the chia pudding can set.
  4. Remove from the fridge in the morning and enjoy.
