Chipotle Sun-dried Tomato Dip

There are more dip options than salsa and guacamole while you are cleansing. You just have to think outside the box and realize the amount of options that are available and cleanse-approved.

Ingredients

  • 1/2 c packed sun-dried tomatoes (soaked in enough water to cover)
  • 3/4 c raw cashews
  • 1 c tomatoes, diced
  • 1 garlic clove, minced
  • 3/4 tsp. sea salt
  • 1/2 tsp. onion powder
  • 2 tbsp. nutritional yeast
  • 1 tsp. raw apple cider vinegar
  • 1/4 tsp. chipotle chile powder

Instructions

  1. Blend all ingredients in a food processor or high-speed blender until smooth. Keep some extra sun-dried tomatoes to slice up for topping.
  2. Top the dip with the sliced sun-dried tomatoes and enjoy with some fresh vegetable sticks.
