- 1/2 c packed sun dried tomatoes, soaked in enough water to cover
- 3/4 c cashews
- 3/4 c tomato soak water
- 1/2 c diced tomato
- 1 clove garlic
- 3/4 tsp. himalayan salt (use up to 1 teaspoon per your taste)
- 1/2 tsp. onion powder
- 2 tbsp. nutritional yeast
- 1 tsp. apple cider vinegar
- 1/4 tsp. chipotle chile powder
- Blend all ingredients until smooth, reserving one piece of sun dried tomato.
- Chop the dried tomato and stir into the blended dip.
