Chipotle Sun Dried Tomato Dip



  • 1/2 c packed sun dried tomatoes, soaked in enough water to cover
  • 3/4 c cashews
  • 3/4 c tomato soak water
  • 1/2 c diced tomato
  • 1 clove garlic
  • 3/4 tsp. himalayan salt (use up to 1 teaspoon per your taste)
  • 1/2 tsp. onion powder
  • 2 tbsp. nutritional yeast
  • 1 tsp. apple cider vinegar
  • 1/4 tsp. chipotle chile powder


  1. Blend all ingredients until smooth, reserving one piece of sun dried tomato.
  2. Chop the dried tomato and stir into the blended dip.
