Ingredients
- 4 c cucumber, peeled and chopped
- 1/2 large avocado, peeled and pitted
- 1 clove garlic, minced
- 1 tbsp. raw apple cider vinegar
- 2 green onions, roughly chopped
- 1/3 c basil (plus more for serving)
- 2/3 c water
- 3/4 tsp. sea salt
Instructions
- Add all of the ingredients to a blender and blend on high for 30-60 seconds, or until the mixture is very smooth.
- Serve the soup immediately at room temperature, or chill it in the fridge for an hour prior to serving.
- After pouring it in cups or bowls, feel free to top your soup with some freshly chopped avocado, basil leaves, or diced cucumber. Season with an optional sprinkle of sea salt and pepper.
