Cucumber Hummus Roll Ups

Maintaining creativity with your raw vegan diet is the key to keeping your taste buds interested in raw foods. Elevate your dishes to the next level by thinking outside the box. You don’t have to spend eight hours making a feats; rather, you can make a raw hummus recipe and roll it up in cucumber strips. It’s that simple!

For the Hummus

  • 1 zucchini, chopped
  • 1/8 c raw tahini
  • 1 tbsp. extra virgin olive oil
  • 1 clove garlic, minced
  • 1/4 lime, juiced
  • 1/4 tsp. dried dill
  • pinch of sea salt
  • pinch of pepper

For the Roll Ups

  • 1 English cucumber
  • 1 tsp. raw sesame seeds
  • 1 tsp. lemon zest
  • 1 tbsp. cilantro, chopped


For the Hummus

  1. Add all of the ingredients to a food processor and pulse until smooth. You may need to stop blending, scrape down the sides, and continue blending to ensure that all the flavors mix together.
  2. Spoon the hummus into a bowl and set aside.

For the Roll Ups

  1. Using a mandoline or vegetable peeler, slice the cucumber into long thin strips.
  2. Take one strip and spread a thin layer of hummus across the length of the cucumber. Roll this up and set it aside while you make the rest of the rolls.
  3. Once all of the rolls are complete, sprinkle the sesame seeds, lemon zest, and chopped cilantro on top of the rolls. Enjoy!
