Detox Broccoli Soup That Is Vegan & Keto

This is a savory soup with a creamy, coconutty base. With vibrant flavors and a healthy dose of folate and protein, this soup is the perfect appetizer or side to a light entree.

For the Soup

  • 1 medium head of broccoli
  • 1 (14 oz) can coconut milk
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. curry powder
  • a pinch of oregano

Optional Toppings

  • crushed macadamias
  • parsley, chopped
  • avocado, diced


  1. Roughly chop the head of broccoli into florets and place it in a saucepan with the coconut milk over over medium-high heat. Bring to a boil and then reduce the heat to simmer for 5 minutes.
  2. Remove the pan from the heat and let it cool for a couple minutes. Pour this into a blender and pulse until you get a smooth consistency.
  3. Transfer the soup back to the saucepan and place over medium heat. Stir in the sea salt, pepper, curry powder, and oregano. Remove from heat and serve.
  4. Top with whatever toppings you desire.
