Dragon Fruit Banana Sorbet

When the weather is hot, you want something refreshing to cool you down. Rather than eating a frozen dairy-based ice cream treat that can overheat you and cause inflammation, you can opt for healthy sorbets or ice pops. It is very to make your own refreshing desserts that contain healthy ingredients that supply the nutrients you need to balance your water and electrolyte loss when it is hot outside.

Besides being a striking fruit to look at, dragon fruit exhibits a refreshing and sweet flavor profile that goes great in homemade desserts. The flesh of dragon fruit ranges from white (with pink or yellow skin) to hot pink or deep red. It has tiny black seeds that resemble poppy seeds. Dragon fruit that has white flesh tends to have a milder taste, while the hot pink flesh tends to be sweeter and juicer, making it an excellent ingredient for homemade sorbets. Not to mention, using this fruit in various recipes helps to transport you to the tropics, where they are more popular.

Because this sorbet contains dragon fruit and bananas, you don’t really need to add natural sweetener. We included a tablespoon of grade A maple syrup, which you can substitute for raw agave nectar, just for a touch of sweetness. Most of the sweetness comes from the bananas, which also give this sorbet a velvety smooth texture. One important thing to remember is that you should peel and slice the bananas prior to freezing them overnight. Freezing them with the peel on will frustrate you, as removing the frozen peel is definitely a challenge.

Ingredients

  • 2 bananas, peeled, sliced, and frozen overnight
  • 1 dragon fruit, peeled and sliced
  • 1 tbsp. grade A maple syrup

Instructions

  1. Add the frozen banana slices, cubed dragon fruit, and maple syrup to a food processor and blend until smooth and creamy.
  2. You may need to stop blending, scrape down the sides, and continue blending several times to fully incorporate the ingredients.
  3. You can eat it straight away or spoon it into a freezer-safe container and place in the freezer until you are ready to enjoy.
