Ingredients

For the Dressing

  • 2 tbsp. freshly squeezed lemon juice
  • 2 tbsp. olive oil
  • 1 tbsp. raw apple cider vinegar
  • 2 tsp. Herbs de Provence
  • 1/2 tsp. mustard powder
  • sea salt and freshly ground black pepper, to taste

For the Salad

  • 1 tbsp. chopped Italian parsley
  • 1 large avocado, peeled, pitted, and cubed
  • 4 c broccoli florets
  • 1 c spring mixed greens
  • 1 c cherry tomatoes, halved
  • 1/2 c blueberries
  • 2 tbsp. hemp hearts

Instructions

For the Dressing

  1. In a small bowl, combine the ingredients and whisk well until fully mixed. Taste and adjust seasonings as needed.
  2. Set the dressing aside while you prepare the salad.

For the Salad

  1. Add all of the ingredients to a large bowl and toss gently to combine.
  2. Pour the dressing over the salad and toss to ensure all the ingredients are coated. Serve and enjoy.
