Easy Raw Pad Thai Salad

This is a different approach to a salad, which is reminiscent of the classic Pad Thai you know and love. With similar flavors and a whole lot of crunch, you can’t go wrong!

  • 2 zucchini, spiralized
  • 2 c bean sprouts
  • 3/4 c raw cashews, chopped
  • 1 red bell pepper, sliced into thin strips
  • 4 green onions, diced
  • 1/2 c cilantro, diced
  • juice of one lime
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. coconut aminos
  • 1/4 tsp. sea salt


  1. Add all of the ingredients to a large salad bowl and mix until the veggies are coated in the liquids. Add a pinch of cayenne pepper if you want to add some heat!
