Ingredients
For the Salad
- 2 c kale
- 2 c broccoli florets
- 2 c brussels sprouts, roughly chopped
- 2 c red cabbage, roughly chopped
- 1 c carrots, roughly chopped
- ½ cup fresh parsley
- ½ cup raw almonds
- 1 tbsp. raw sunflower seeds
For the Dressing
- 3 tbsp. olive oil
- ½ cup fresh lemon juice
- 1 tbsp. fresh ginger, peeled and grated
- 1/4 tsp. ground mustard seed
- 2 tsp. grade B maple syrup
- ¼ tsp. sea salt
Instructions
- Using a food processor, process all the veggies, except for the parsley, until finely blended. Chop the parsley and mix it in with the rest of the veggies in a large bowl.
- Add the almonds to the food processor and pulse, until roughly chopped, and mix in with the salad along with the sunflower seeds.
- In a small bowl, whisk together all the ingredients for the dressing and drizzle over top of the salad OR place in a jar and use as needed. Enjoy!
