Ingredients
For the Salad
- 8 c kale, torn and thick stems removed
- 2 medium apples, cored and diced
- 3/4 c pomegranate seeds
- 8 green onions, thinly sliced
- Sea salt and pepper, to taste
For the Dressing
- 1 clove of garlic, minced
- 1/2 tsp. sea salt
- 2 tbsp. freshly squeezed lemon juice
- 2 tbsp. apple cider vinegar
- 1/2 c tahini
- 1 1/2 tbsp. grade A maple syrup
- 2 tbsp. olive oil
- black pepper, to taste
- 1/4 c water, or more or less as needed
Instructions
For the Salad
- Make sure to massage the kale when you rinse it to help soften the fibrous leaves. Tear them and remove the thick stems.
- Add the rinsed kale to a large salad bowl, along with the apples, pomegranates, and green onions. Season with sea salt and pepper and toss gently to combine. Set aside.
For the Dressing
- In a small bowl, whisk together the ingredients until you get a smooth consistency. You can add more or less water to reach your desired consistency.
- Pour the dressing over the salad and toss to coat the ingredients. Serve and enjoy immediately.
