For the Salad

  • 6 c kale, stems removed and thinly sliced
  • 1 c Fuji apple, seeded and cut into matchsticks
  • 1 c avocado, peeled, pitted, and cubed
  • 1/2 c pomegranate arils
  • 1/2 c raw pecans

For the Dressing

  • 4 tbsp. extra virgin olive oil
  • 2 tbsp. freshly squeezed lemon juice
  • 1 tbsp. grade A maple syrup
  • 1/2 tsp. mustard powder
  • 1/2 tsp. sea salt
  • 1/8 tsp. black pepper


For the Salad

  1. Make sure to thoroughly rinse the kale leaves and remove the stems before you thinly slice them.
  2. Add the thinly sliced leaves and the remaining salad ingredients to a large bowl and toss gently to combine. Set aside while you prepare the dressing.

For the Dressing

  1. Add all of the ingredients to a bowl and whisk to combine. Alternatively, you can add all of the ingredients to a small jar, screw on the lid, and shake well to combine.
  2. Pour the dressing over the salad and toss to coat all of the ingredients. Serve and enjoy immediately.
