Ingredients
- 2 c homemade almond milk
- 3 tbsp. grade A maple syrup
- 1/4 c freshly squeezed key lime juice
- 1 tsp. lime zest (from key limes)
- 1 tsp. alcohol-free vanilla extract
- 1/2 c chia seeds
Instructions
- Add all of the ingredients (except the chia seeds) to a large bowl and mix well to combine. Gradually pour the chia seeds into the bowl and whisk while doing so to avoid clumping.
- Cover the bowl and allow the mixture to sit for five minutes. Stir again to prevent clumping and then pour into two to four jars, screw on the lids, shake well, and then refrigerate overnight.
- Once the chia pudding has fully set, remove from the fridge and enjoy. Feel free to top with extra lime zest or chopped raw nuts for extra nutrition.
