Ingredients
For the Salad
- 5 c baby spinach
- 2 c mandarin oranges, peeled and segmented
- 1 c pomegranate arils
- 1 avocado, peeled, pitted, and diced
For the Dressing
- 1/4 c apple cider vinegar
- 2 tbsp. grade A maple syrup
- 1/2 tsp. sea salt
- 1 tbsp. poppy seeds
- 2 tbsp. olive oil
- 1/2 lemon, juiced
Instructions
For the Salad
- Add all of the ingredients to a large salad bowl and toss well to combine.
- Set aside while you prepare the dressing.
For the Dressing
- In a small bowl, whisk all of the ingredients together and then taste, adjusting flavors as needed.
- Pour the dressing over the salad and toss to coat the ingredients. Serve and enjoy.
