  • 1 c mango, peeled and diced
  • 1 c cucumber, peeled and diced
  • 1 c watermelon radish, peeled and diced
  • 1/2 c cilantro, chopped
  • 1 c cherry tomatoes, halved or quartered
  • 1 lime, juiced
  • sea salt & pepper, to taste


  1. Combine all of the ingredients in a medium-sized mixing bowl and toss to combine.
  2. Season with sea salt and pepper to taste and adjust lime juice if necessary. Enjoy on its own, with dehydrated crackers, on top of raw tacos, or inside collard wraps or lettuce cups.
