Melon Ball Salad With A Lemon Mint Dressing

Sometimes you just need to change up the salads that you eat. The lemon mint dressing complements the natural sweetness of the melon. If you want to add other fruit, feel free to experiment with different ingredients.

Ingredients

  • 1/2 watermelon
  • 1/2 honeydew
  • 1/2 cantaloupe
  • 1/2 c blueberries
  • 8 -10 mint leaves
  • juice of 1 lemon
  • 1/2 tsp. sea salt
  • 1/4 tsp. curry powder

Instructions

  1. For this recipe, you are going to need a melon baller. The trick to using it successfully is to press it down straight into the melon and turn it over to make the balls.
  2. Make balls from all the melons and place them in a large salad bowl. Add the blueberries to the bowl and then make your dressing.
  3. Whisk the chopped mint leaves, lemon juice, sea salt, and curry powder together and drizzle it over the salad when you are ready to serve.
