Mixed Green Deli Style Salad With A Mustard Vinaigrette

This recipe is such a great combo of mixed greens, onion, and peaches. The slight bitterness of the kale, along with the sharpness of the onion, is complemented by the sweetness of the peaches and raisins. The added crunch of the pecans gives this recipe an added layer of flavor.

For the Salad

  • 2 c of kale cut into 2 in strips
  • 1/2 red onion, thinly sliced
  • 1 c raw pecan halves
  • 1 peach, sliced
  • 1/4 c gold raisins (no preservatives or added sugars)

For the Dressing

  • 1 tbsp. raw apple cider vinegar
  • 1/2 tsp. ground mustard seed
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. grade A maple syrup
  • sea salt and pepper, to taste


For the Salad

  1. Add all of the ingredients to a large salad bowl and mix well to combine. Set aside while you make the dressing.

For the Dressing

  1. Add all of the ingredients to a small bowl and whisk to thoroughly combine all of the ingredients. Taste and adjust seasonings as needed.
  2. Drizzle the dressing over the salad and toss to coat all of the ingredients.
  3. Top with some additional pecans and raisins and enjoy!
