Ingredients

For the Salad

  • 4 c mixed greens
  • 4 fresh figs, quartered
  • 2 tbsp. raw pumpkin seeds (optional)

For the Dressing

  • 2 tbsp. olive oil
  • 1 tbsp. raw apple cider vinegar
  • 1 tbsp. freshly squeezed lemon juice
  • 1/4 tsp. mustard powder
  • 1 tbsp. raw agave nectar
  • pinch of sea salt and black pepper

Instructions

For the Salad

  1. Combine all of the ingredients in a large salad bowl and give them a gentle toss to combine.
  2. Set aside while you prepare the dressing.

For the Dressing

  1. Add all of the ingredients to a small bowl and whisk to combine. Taste and adjust seasonings as needed.
  2. Pour the dressing over the salad and toss to coat all of the ingredients. Top with optional raw pumpkin seeds and enjoy.
