When it comes to succeeding on the raw vegan diet, you can’t simply eat salad every night. Well, that’s not entirely true because some people can eat the same thing every night. We, and many other people, love diversity in our cuisines and our meals. That’s why we recommend experimenting with multiple raw vegan entrees such as these mixed vegetable wraps. Rather than combining a bunch of salad ingredients in a bowl, you can roll them up in cleanse approved wraps!

The raw vegan diet continues to grow in popularity, so a number of health food brands keep producing raw vegan snacks, beverages, and more. One great option for raw vegans is the raw coconut wrap. You do have to be selective with the coconut wraps you purchase because not all of them are raw. We recommend the organic coconut wraps from Thrive Market, which only consist of organic coconut meat, organic coconut water, and organic extra virgin coconut oil. Amazing, right?

What would wraps be without an excellent dipping sauce? Nothing, is the correct answer. The dipping sauce is the icing on the cake, the banana in the smoothie, the pesto on the zoodles; you get the picture. The sauce is the boss and reigns supreme in the wrap game. Now, all you have to do is roll up those veggies and start dippin’!

Mixed Vegetable Wraps With A Cashew Dipping Sauce
  • Prep Time:20m
  • Total Time:20m

For the Dipping Sauce

  • 2 tbsp. raw cashew butter
  • 2 tsp. coconut aminos
  • 2 tsp. grade A maple syrup
  • 2 tsp. grape seed oil
  • 2 tsp. freshly squeezed lime juice
  • 1/2 tsp. ginger root peeled and grated
  • Water as necessary to thin sauce

For the Wraps

  • 1 c red cabbage thinly sliced
  • 1 c jicama peeled and shredded
  • 2 c shredded carrots
  • 1 avocado peeled, pitted, and sliced
  • 1/2 c cilantro
  • 1 green onion chopped
  • 1 c lettuce thinly sliced
  • 4 -6 raw vegan coconut wraps

For the Dipping Sauce

  1. Add all of the ingredients to a medium-sized bowl and whisk to combine.
  2. Pour the water in teaspoon by teaspoon until the sauce is the consistency of your liking.
  3. Set aside and get ready to prepare the wraps.

For the Wraps

  1. After you prepare all of the filling ingredients, arrange them around your prep station so that you can easily grab them and assemble the wraps.
  2. Lay one coconut wrap on a cutting board and mound the vegetables in the center of the wrap.
  3. Wet your finger and run it around the edges of the wrap. Fold the bottom over the middle and grab both sides, pulling them towards the center.
  4. Tightly roll the wrap like a burrito and seal the wrap by pressing down firmly. Continue to make the rest of the wraps.
  5. For presentation, slice the wraps in half and plate them with the dipping sauce in a separate bowl. Enjoy!
