Nectarines and peaches are some of the juiciest, sweetest, and fragrant fruits during their season. Get your hands on them in the summer months because that is when they are freshest. These stone fruit varieties are also quite versatile, going great in salads, smoothies, sorbets, fruit medleys, and jams. That’s right, folks, jams. Skip the strawberries and blackberries and grab some nectarines to make yourself a healthy raw vegan jam.

Typically, you have to cook sugar, fruit, and a few other ingredients to make jam. For this recipe, you just need a blender and the ingredients. Nectarines are inherently sweet and subtly tart, so this jam is not too dissimilar to apricot jam, if you’ve eat that before. They are also rich in water, which the chia seeds absorb to make a thick, jelly-like jam. It’s like a science experiment that involves very little effort or studying.

You can leave the skin on your nectarines because the skin contains extra nutrition, especially fiber. You may not even notice that the skin is in the jam if you have a high-speed blender. If you are worried about the pinkish color that the skin yields, you can peel the nectarines prior to blending. Lastly, and this is a disclaimer that everyone should know, make sure to pit the nectarines. The last thing you want is for the pits to end up in your blender.

Ingredients

  • 2 c nectarines, pitted and cubed
  • 2 tbsp. chia seeds

Instructions

  1. Add the nectarines to a food processor or high-speed blender and blend until you achieve a smooth puree. This should yield about one cup of puree.
  2. Spoon the puree into a bowl or container and stir in the chia seeds.
  3. Refrigerate this mixture for several hours or overnight to allow the chia seeds to thicken.
  4. Remove from the fridge once it is the consistency of a jam and use as you please.
