Nectarine Salad With A Smoked Paprika Dressing

When you take a bite of this salad, you will immediately want another, and another, and then another. This is not your average salad because the sweet nectarines, avocados, and blueberries take it to another level!

For the Salad

  • 1 small head of lettuce of your choice chopped
  • 1 large nectarine pitted and sliced
  • 1/2 large avocado pitted, peeled, and sliced
  • 1/2 medium English cucumber choped
  • 2 tbsp. raw pumpkin seeds
  • 1/4 c fresh blueberries

For the Dressing

  • 1/4 c raw apple cider vinegar
  • 3 tbsp. raw agave
  • 1/2 tsp. ground mustard seed
  • 1 1/2 tsp. freshly squeezed lime juice
  • 1/2 tsp. freshly ground pepper
  • 1/2 tsp. sea salt
  • 3/4 tsp. smoked paprika
  • 1 clove garlic minced
  • 1 tbsp. shallot minced
  • 1/4 c extra virgin olive oil


For the Salad

  1. Combine all of the salad ingredients in a large bowl and mix well. Set aside while you make the dressing.

For the Dressing

  1. Add all of the ingredients, except for the olive oil, to a blender and blend until you get a smooth consistency. Slowly drizzle in the olive oil during the blending process.
  2. Pour the dressing over the salad immediately, mix well, and then serve.
